Try the following
fruit loaf
500g/1Ib 2oz small currants
140g/5oz raisins
140g/5oz mixed peel
500ml/17fl oz bottle strong bottled beer, such as Black Sheep Brewery Riggwelter Strong Ale
180g/7oz soft dark brown sugar
150g/5?oz self-raising flour
180g/7oz wholemeal self-raising flour
3 tsp mixed spice
3 free-range eggs
Method
1. Put the dried fruit into a large pan and cover with the bottled beer.
2. Gently heat the fruit until the beer is hot, but not boiling. Remove from the heat, cover and leave overnight.
3. When you are ready to cook the loaf, preheat the oven to 140C/275F/Gas 1.
3. Add the sugar, flours, mixed spice and eggs to the fruit mixture. Stir well until all the ingredients are combined.
4. Divide the mixture between two greased 500g/1Ib 2oz loaf tins.
5. Bake for 1? hours until risen, pale brown and firm to the touch.
6. Cover with a tea towel and leave on a wire rack to cool.
7. Wrap the loaves tightly in cling film and keep in a cool, dry place for up to 6 weeks
or Fruited bran loaf
55g/2oz bran
150g/5oz brown sugar
225g/8oz dried fruit
300ml/? pint milk
175g/6oz self raising flour
Method
1. Put the bran, sugar and dried fruit into a bowl and mix thoroughly.
2. Stir in the milk, add the flour and mix well. Pour the mixture into a well-greased 450g/1lb loaf tin.
3. Bake at 180C/350F/Gas 4 for 75 minutes. Turn out of the tin and cool on a wire rack.
Bread Machine Fruit Loaf
270 ml water
6 teaspoons butter or oil
1 1/2 teaspoons salt
6 teaspoons brown sugar
450 g white bread flour (3 cups)
6 teaspoons powdered milk
3 teaspoons ground mixed spice
2 teaspoons yeast
1/2 cup mixed dried fruit (I use sultanas and raisins, but you could use commercial mixed fruit or currants)
Gelatine Glaze
3 tablespoons water (optional)
6 teaspoons sugar (optional)
3 teaspoons gelatin (optional)
1. Put all of the ingredients except the fruit in the order recommended by your manufacturer.
2. If you have a nuts dispenser place the fruit in there.
3. Otherwise add the fruit when the 2nd knead has 8 minutes to go.
4. If using the glaze, combine glaze ingredients in a small saucepan over a heat until the sugar and gelatine has dissolved.
5. Use the pause function if you have one, at fifteen minutes into the baking cycle, brush glaze over loaf.
fruit loaf is best if you soak the currents in tea for a few hours before you make it

Easy Fruit Loaf
2 cups water
2 cups sugar
2 cups sultanas or mixed dried fruit
2 ounces butter
3 cups flour
1 teaspoon mixed spice
1 teaspoon cinnamon
1 teaspoon baking soda
Heat gently together in a pot on stove top the water, sugar, dried fruit and butter until butter melts and sugar dissolves.
Allow to cool for a few minutes then stir in flour and spices and baking soda.
Pour into a large loaf pan which has been greased and floured or bottom lined with baking paper and bake at 350'F for 45 minutes or until a cake tester comes out clean.
Remove from oven and leave to cool in tin for 10 minutes then tip out onto a wire rack to finish cooling.
Serve cut in slices and buttered.
