Why does brown sugar turn hard?!

Question:

Why does brown sugar turn hard?

Whenever I store my brown sugar in a zip-lock bag after opening it...when later I need to re-use it, it's hard. Is there something I can do to soften up the brown sugar again?

Answers:
It just dries out. You can stick it in the microwave for just like 15 seconds. Also I have heard that you can just stick it in the freezer to prevent it from hardening.

Brown sugar has a high moisture content so the best thing to do is keep it tightly packed. To loosen it just use a fork and mix it up or store it with a piece of bread (only for a day or two) to keep the moisture. Brown sugar is pretty inexpensive so use it up right away or within a few weeks if kept tightly to ensure freshness. Dry brown sugar is no good and defeits the purpose.

Brown sugar turns hard because of the molasses content in it. White sugar has had the molasses removed so it doesn't turn hard. You can store your brown sugar in an air tight container and that will cut down on the likelihood of it turning hard. If it does turn hard then pop it in the microwave (taken out of the plastic bag) for 15-20 seconds and its soft again.

a piece of bread (any will work, but the moister the better) will keep moisture in for a few days.

otherwise, when you go to use the sugar and it is hard, you can knead it a little to loosen the crystals, which will soften it to a point...

Try putting a piece of white bread in the ziploc bag, it will keep the brown sugar soft.

Stop turning it on, you tease!

Place it in the microwave for 10 to 15 seconds......

Keep it soft like butter baby!!!
