SHELLS AND COTTAGE CHEESE

cottage cheese
box of small shells (noodles)
butter
salt and pepper

Boil shells as directed on box. Drain. Return shells to pot, add cottage cheese and butter, salt and pepper to taste. Mix well. You can add more cottage cheese on top of individual servings or serve as is out of the pot.
Great quick meal that kids love!

COTTAGE CHEESE SALAD

1 box Jello (any flavor)
1 16 oz. small curd cottage cheese
1 12 oz. can of crushed pineapple
1 10 oz. tub of whipping cream

Drain the pineapple. Mix the cottage cheese and whipping cream together, until well blended. Next, stir in the pineapple. Mix well.
Stir in Jello mix. Mix well until Jello is completely dissolved. Chill 4 hours prior to serving.

Vegetable Lasagna


12 lasagna noodles
2 tablespoons olive oil
2 heads fresh broccoli, chopped
2 carrots, thinly sliced
1 large onion, chopped
2 green bell peppers, chopped
2 small zucchini, sliced
3 cloves garlic, minced
1/2 cup all-purpose flour
3 cups milk
3/4 cup Parmesan cheese, divided
1/2 teaspoon salt
1/2 teaspoon pepper
1 (10 ounce) package frozen chopped spinach, thawed
1 (8 ounce) container small curd cottage cheese
24 ounces ricotta cheese
2 1/2 cups shredded mozzarella cheese, divided
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Grease a 9 x 13 inch casserole dish.
Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain.
Heat oil in a large cast iron skillet over medium heat. When oil is hot add broccoli, carrots, onions, bell peppers, zucchini and garlic. Saute for 7 minutes; set aside.
Place flour in a medium saucepan and gradually whisk in milk until well blended. Bring to a boil over medium heat. Cook 5 minutes, or until thick, stirring constantly. Stir in 1/2 cup Parmesan cheese, salt and pepper; cook for 1 minute, stirring constantly. Remove from heat; stir in spinach. Reserve 1/2 cup spinach mixture. In a small bowl combine cottage and ricotta cheeses; stir well.
Spread about 1/2 cup of spinach mixture in the bottom of the prepared pan. Layer noodles, ricotta mixture, vegetables, spinach mixture and 2 cups mozzarella cheese, ending with noodles. Top with reserved spinach mixture, 1/2 cup mozzarella cheese and 1/4 cup parmesan cheese.
Bake in preheated oven for 35 minutes, or until lightly browned on top. Cool for approximately 10 minutes before serving.

It's very good with just some fresh fruit on top, like strawberries or watermelon.

I learned to make lasagna from my mother, and think this recipe is so much better than any other lasagna I've tried. Feel free to add green peppers to the meat sauce if that sounds good to you. The meat sauce gets more flavor as it cooks, so simmer it anywhere from 45 minutes to a couple of hours, but keep the temerature low so you don't reduce the amount by much. I also really recommend using the long rectangular slices of mozzarella cheese (approximately 3x6 inches) rather then shredded cheese, since it is so much easier to spread the meat sauce on the slices.

I received this recipe from an elderly friend and have been enjoying it since. They are really more like little cakes and are very addictive. This recipe makes a lot of cookies, but they freeze well.

Okay, i would normally hook you up with a awesome reciepe, but crazy idea....take pretzals and eat teh cottage cheese with them.

3 large Idaho potatoes
1/4 cup (1/2 stick) butter
1 cup cottage cheese
1/2 onion, diced
Salt and pepper
Paprika

Preheat the oven to 350 degrees F.
Scrub the potatoes, slice them, and put in a pot with water to cover. Boil the potatoes until tender, then drain and mash them with 2 tablespoons of the butter. Add the cottage cheese, onion, and salt and pepper to taste. Stir the mixture gently, and then put in a greased casserole. Dot with the remaining 2 tablespoons of butter and sprinkle with paprika. Bake, uncovered, for 30 minutes

here's a few that i'v tried that was good...

cottage cheese pasta

1/2 cup cottage cheese
1 cup chopped tomatoes
Plenty of chopped fresh basil
1/2 clove chopped garlic
1 tbsp olive oil
Mix and heat for a few minutes over medium heat till flavours combine, cheese melts a bit, and garlic becomes fragrant. Toss with pasta and top with grated Parmigiana.

cottage cheese fruit dip

1 cup cottage cheese
dash of sugar... more or less depending on taste
1 tsp cinnamon
1/2 tsp vanilla extract
Combine above ingredients in blender. Serve with fruit.

Cottage Cheese Nut Loaf
1/4 cup unsalted margarine
1 medium onion, chopped
2 chicken bouillon cubes...dissolved in 1/4 cup hot water
2 eggs, well beaten
2 cups low fat cottage cheese
1/2 cup chopped walnuts
2 cups flake cereal - bran or corn
Preheat oven to 350 degrees F. Saute onions in margarine. Beat eggs. Add bouillon, eggs and remaining ingredients, mix well. Bake 1 hour in oiled loaf pan or casserole dish.

I can't figure that u have never had cottage cheese?? Oh well, I've got one from an old Italian lady. Don't know how healthy it is but it's good. 1 container of C. Ch. 4-6 Gr onions chopped, 6-8 strips of bacon fried crisp and broken up , vinegar and ex virgin olive oil S&P to taste. combine well. Just use the Oil and vinegar as u would on a salad. mix it up and taste till u like it. I really think u should just try just plain C Chesse. It is the best. U don't need a recipe for it.

I like a tomato that is firm and almost cherry red...sliced into 1/4 inch slices..2 tablespoons of "medium curd" cottage cheese on top of each slice with salt and pepper sprinkled on top. If you are into presentation...drop a few parsly flakes on top of that. Looks great and tastes delicious. Wanna' spice it up...squeeze a little lemon on top of that. Lot's of ways to do cottage cheese. It doesn't have any real taste...it's up to you to make it part of a meal. Good in all diet recipes though.

Use it as your breakfast. Buy some non-fat cottage cheese. Chop up some dried apricot or other dried/fresh fruit you like. Add the fruit and some granola or chopped almond and eat it that way.

As a snack, dip cut up veggies in cottage cheese, spiced with dill.

At dinner, substitute cottage cheese mixed with 1 egg for the ricotta cheese in your lasagna.

Plain is wonderful too.

My recipe is called stuffed tomatoes
6 large red firm tomatoes
1 cup shredded cottage cheese
1 onion finely chopped
1/2 cup finely chopped coriander leaves mint leaves and wee little bit of parsley

Mix all these ingredients add salt and pepper leave it aside.
Take the tomatoes slice off the heads and keep it u will need them. Scoop out the pulp frm the tomatoes and keep it . NOW stuff the tomatoes with the stuffing of cottage cheese place back the sliced heads glaze the tomatoes with olive oil and bake in preheated oven for 10 mins

I usually eat it with fresh apple slices, grapes,srawberries and crackers. I t also makes a great party platter.

Mash small curd cottage cheese or process it to a smooth paste...add honey & an 1/4 tsp extract such as lemon, vanilla or almond.

Fill half-peach fresh or canned, add a sprig of mint and chill well . . .

You get the taste & texture of cream cheese or ricotta cheese with the value & heath benefits of cottage cheese.

yeah have it with whole meal toat and scrambled eggs. This is extremly good breakfast and it aids weight loss.

Best way to eat cottage cheese? Just a little salt and black pepper. Really a tasty, quick snack. ..particularly on a hot, summer's afternoon with a glass of iced tea. Maybe, a few saltine crackers.

Baked Noodles and Cottage Cheese Casserole

Makes 6 Servings

3/4 cup Hood Cottage Cheese
8 oz. (equal to 4 oz. raw) noodles, cooked al denté
1/4 cup Hood 1% low fat milk
1 Tbsp butter, melted
2 Tbsp chives, chopped
1/2 tsp garlic, minced
Salt and pepper, to taste
1 1/2 Tbsp bread crumbs
Paprika, for topping

Recipe Arrow Cook the noodles al dente and cool to room temperature.
Recipe Arrow Place the cooked noodles into a bowl and toss with 1/2 cup of cottage cheese, milk, melted butter, chives, and garlic. Season this mixture with salt & pepper to taste.
Recipe Arrow Spray an 8 x 8 inch baking dish with nonstick cooking spray lightly on the bottom and sides.
Recipe Arrow Place the noodle mixture into this dish and top with the remaining cottage cheese spreading this evenly from end to end.
Recipe Arrow Top this evenly with breadcrumbs and top this with paprika for color. Spray this lightly with some nonstick spray.
Recipe Arrow Place this into a 400°F oven for 20 to 30 minutes.

Serving Suggestion: Serve separately in a casserole or as an accompaniment.
