Potato Salad?!

Potato Salad?

My nan makes a potato salad, she is away at the moment else i would ask her, but she uses cream, potatos and vinegar. anyone know anything about this? i would love to know how to make it.


Answers:
You can buy potato salad dressing from the shops. Just boil some potatoes, drain them, cook some bacon, boil an egg and add all the ingredients together. Parsley and chives go well with the salad as a decoration/ garnish.

Creamy Garden Potato Salad

INGREDIENTS:
1 1/2 pounds red potatoes, cubed and cooked (3 to 4 cups)
3 hard-cooked eggs
2 to 3 tablespoons shredded carrot (about 1/2 carrot)
1 (10 oz.) pkg. frozen peas, thawed
1/4 cup chopped red bell pepper
1/4 cup chopped green or yellow pepper
1/4 cup chopped celery
1/4 cup chopped red onions

Dressing:
1/4 c. heavy cream
1/2 to 3/4 c. mayonnaise
1 to 2 tsp sweet pickle relish or sweet pickles chopped with a little juice
1 to 2 tsp Dijon mustard
salt and pepper to taste

fresh dill and/or parsley, to taste
sliced tomato
Lettuce leaves

PREPARATION:
Combine first 8 ingredients. Add cream, 1/2 cup of mayonnaise, relish, and mustard; toss gently to combine. Taste and add more mayonnaise if desired. Salt and pepper to taste. Stir in parsley and dill, if desired. Arrange lettuce and tomato slices on platter and top with potato salad.

Old-Fashioned Potato Salad Recipe

INGREDIENTS:
3 large potatoes, peeled
1 large Bermuda onion, sliced thin
1/4 cup olive oil
3 tablespoons vinegar
1 clove garlic, finely minced
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons sugar
3 sprigs parsley, minced

PREPARATION:
Boil potatoes until soft, remove from water, and let cool completely. Slice potatoes into 1/4-inch slices. On a large serving platter, alternate sliced potatoes with sliced onion. In a small bowl, whisk together oil, vinegar, garlic, minced parsley, sugar, salt, and black pepper. Pour mixture over potatoes and onions then toss lightly. Season to taste with additional salt and pepper; refrigerate. For best flavor, refrigerate overnight.

Classic Potato Salad

INGREDIENTS:
1 cup mayonnaise
2 tablespoons vinegar
1 1/2 teaspoons salt
1 teaspoon sugar
5 to 5 med. potatoes, peeled, cubed, cooked
1 cup sliced celery
1/2 cup chopped onion
3 eggs, hard-boiled
1 to 2 Tbs chopped green onions, optional garnish
1 tomato, cut in wedges, optional garnish
PREPARATION:
Combine mayonnaise, vinegar, salt, sugar, and pepper in a large bowl. Add remaining ingredients; toss gently to combine well. Cover; chill for 2 or more hours for best flavor. Garnish with chopped green onion and tomato wedges if desired

New Red Potato Salad:

Prep: 20 min.

Ingredients

* 3 pounds unpeeled red potatoes
* 4 eggs
* 1 1/2 cups mayonnaise
* 2 tablespoons milk
* 2 tablespoons distilled white vinegar
* 1/2 cup sliced green onions
* 1/2 teaspoon salt
* 1/4 teaspoon ground black pepper
* 1 cup sliced celery

Cooking Instructions

Bring a large pot of salted water to a boil. Add red potatoes, and cook until tender but still firm, about 15 minutes. Drain, cool and chop into 1 inch cubes. Place in a medium bowl.

Place eggs in a medium saucepan, and cover with cold water. Bring water to a boil, and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and dice.

In a small bowl, whisk together mayonnaise, milk, distilled white vinegar, green onions, salt and pepper. Pour the mixture over the potatoes, and mix together with the eggs and celery. Cover, and chill in the refrigerator approximately 2 hours before serving.
