Can you re-melt belgium chocolate?
i bought a chocolate fountain to use at my daughter's shower, but i want to try it out first. it takes about 24ozs of chocolate. i don't want to waste the chocolate, but that is too much for me to eat by myself. can it be re-melted and used again in the fountain? help!!

NO! Either discard the leftover chocolate or use for other desserts. DO NOT try to reuse the chocolate in the fountain, it will not work the second time. Never dispose of left over chocolate down a sink drain.

I did this and it worked fine. As a chocolate purist, I was a little leery of the recipe which came with the fountain, because of its oil content, but follow the instructions exactly. There was still a lot of chocolate left after a large party, so I emptied the fountain and stored the chocolate in the refrigerator. Carefully, slowly re-melt it in the microwave, stirring frequently, and you can re-use the same chocolate.
As a matter of fact, I did this twice with the same batch of chocolate, but it got rather sticky near the end.
I also found that I can freeze the chocolate after one use. I let it solidify in a pan in the fridge, then sealed it in a Foodsaver vacuum bag. I dated it, and used it several months later. Worked great!
