Hot Meatball Sandwiches

1 jar (26 ounces) spaghetti sauce, divided
1/2 cup fresh bread crumbs
1 small onion, finely chopped
1/4 cup grated Parmesan or Romano cheese
1 egg
1 teaspoon dried parsley flakes
1 teaspoon garlic powder
1 pound ground beef
4 (6-inch) Italian sandwich rolls

Preheat the oven to 350 degrees F. In a large bowl, combine 1/3 cup of the spaghetti sauce, the bread crumbs, onion, cheese, egg, parsley flakes, and garlic powder, mix well. Add the ground beef to the mixture and blend well. Shape into about sixteen 2-inch meatballs and arrange in a 9" x 13" baking pan. Bake for 20 minutes. Remove from the oven and drain the liquid. Pour the remaining sauce over the meatballs and return to the oven for 10 to 15 more minutes, or until no pink remains in the meatballs. Serve in the rolls.

PIZZA BAGELS

3 bagels
1 can tomato pieces, drained
1 red or green pepper, chopped
1 med. onion, chopped
Salt and pepper to taste
Oregano
3 slices salami (diced) or pepperoni, optional
6 slices Mozzarella cheese

Cut bagels. Put tomato, peppers, and onion on top. Season with salt, pepper and oregano. Top with salami or pepperoni and Mozzarella cheese. Bake 375 degrees for 15 minutes.

I like the classic, sauce and cheese in microwave

If I don't have left over meatballs from cooking (Sausage and Beef, Bread Crumbs, an Egg, Garlic and Seasoning) I use your standard store bought meatballs (tasty with sauce) and some red sauce (I make a batch once a month and freeze to cook up when I'm lazy) on your standard hoagie roll. If I can find a Italian style seasoned roll, I will use that. I like to use provolone cheese against the bread, followed by the meatballs, and then caramelized onions. I then spoon on the sauce and bake that for about 10 minutes. I top it with black olives and Parmesan cheese. That tends to be enough for me ... if I really feel like I need a side, maybe i'll mix in an Antipasta Salad or my favorite side dish, Garlic Fries.

Garlic Fries are really simple, you just heat up a few tablespoons of butter in a non-stick skillet with about 6 fine chopped garlic cloves, and some crushed red pepper flakes. Then you toss the butter mixture and sprinkle a little parsley.

I prefer pita pizzas over a bagel pizza. Seems more like the thin dough I like.
