Recipes for using Bramley cooking apples?
I would like to try something other than pies or crumbles, I live alone and like to make a batch for the freezer. I would welcome any unusual recipes please.

they go well with pork so could do something with that, or make lots of apple sauce?
Wash and core your Bramley, do not peel or chop. Fill the cavity with mincemeat (as in mince pies) and put in microwave for 5 mins or in a hot (200 degrees) oven for at least 20 minutes. serve with clotted cream or vanilla ice cream
Creamy Chicken with Bramley
1lb (approx 3) Bramley apples, cored and sliced
2 leeks, sliced
3 tbsp olive oil
4 chicken breast fillets
4floz dry cider
?pt chicken stock
1 tbsp rosemary, chopped
6 tbsp creme fraiche
1. Heat 2 tbsp oil in a large frying pan, then add the Bramley apple and leeks and fry for four minutes or until slightly golden. Transfer to a plate and set aside.
2. Add the remaining oil to the pan, and cook the chicken for six to eight minutes, turning once, until golden brown on both sides. Add the cider and stock to the pan with the rosemary and salt and pepper, cover and simmer for 15 minutes or until the chicken is tender.
3. Stir in the creme fraiche and simmer uncovered for a further five minutes or until the sauce has reduced and thickened slightly. Stir in the cooked Bramley and leek, then warm through.

Pan-fried pork in a Bramley and mustard sauce
12oz Bramley apples, peeled, cored and sliced
2 tbsp vegetable oil
4 (6oz) pork loin steaks
2 leeks, sliced
1/4pt dry cider
1/4pt vegetable stock
2 tbsp wholegrain mustard
1tbsp cornflour
4oz half fat creme fraiche
1 Heat the oil in a large frying pan. Add the pork loin steaks and pan fry for 4-5 mins, turning once until golden brown on both sides.
2 To make the sauce, add the leeks and Bramleys to the pan and cook for 3 mins or until golden. Add the cider, vegetable stock and mustard and gently bring to the boil.
3 Return the cooked pork loin to the pan, cover and simmer for 10 mins or until tender.
4 Blend the cornflour to a smooth paste with cold water. Add with the creme fraiche to the pan and gently bring to the boil, stirring until thickened. Simmer gently for 2 mins and serve immediately with freshly cooked pasta.

Bramley apple and feta baked peppers
4 red peppers, halved and deseeded
3 tbsp green pesto sauce
12oz Bramley apples, peeled, cored and sliced
6oz cherry tomatoes
1oz pitted black olives, sliced
a few basil leaves
1 (200g) pack feta cheesee, crumbled
2 tbsp olive oil
2 tbsp grated Parmesan cheesee
1. Preheat the oven to 425oF .
2. Place the peppers in a roasting tin in a single layer. Spoon in the pesto sauce. Divide the apple slices, tomatoes, olives, basil and feta between the peppers.
3. Season well with salt and freshly ground black pepper and drizzle over the oil. Sprinkle with parmesan and bake for 20-25mins or until the peppers are tender. Serve hot with salad.
Peel an apple and discard the peel, then cut the apple flesh into tiny segments and pour over some Demerara sugar and concentrated lime juice, don't go mad with the liquid, just enough to give the apple a coating. stir gently until all the apple is coated and eat with a spoon. My twist on Sweet & sour green Mango. Delicious as a starter. I would not think it good to freeze this item.

Core the apples. Mix sultanas, cloves, cinnamon, brown sugar and a large spoonful of softened butter, stuff the whole in the apple, drizzle over some maple syrup and bake for about an hour - delicious served with a dollop of natural yogurt
I also make a weekly pot of apple puree which is delicious on cereal, or as a pudding in its own right. Very easy, peel and core the apples and cut into 1" chunks. Squeeze a lemon and add brown sugar, cinnamon and grated fresh ginger. Add a splash of water, cover with a lid and cook on the lowest heat on the hob for about 30mins or until the apples have broken down into pulp
