Bored with lunchtime food, got any ideas?!

Question:

Bored with lunchtime food, got any ideas?

I've got a bit stuck in a rut with sarnies, soup, fruit and veggies.
Boooooriiing. Got any ideas for lunch meals that are easy to prepare in the morning before I go to work, or even better, the night before?

Panini Sandwiches!!!!
They go well with pretty much anything.

Chicken salad with sliced red grapes/walnuts sandwich. Or another one of my favorites. Tuna with apples sandwich.

you can make a simple stir fry the night before have enough for dinner and lunch the day after. Really easy and tasty. Just get the Stir Fry meat fry it in a pan add in a chopped green pepper and a chopped onion maybe mushrooms if you like a dash of worcestershire sauce and salt and pepper...Yummy!

A tina of tuna in brine drained and mixed with peppers, spring onions, garlic and tomato sauce on granary bread with ground black pepper.

green fresh salad is easy to prepare an on the side you can add some crackers (Ritz)

I'd go with the chicken salad/apples/grapes thing.
Also, if you put almonds in it, it is very filling.

jacket potatoes ?

Make or buy hummus the night before, and cut up a whole wheat pita and a cucumber to dip in it.

Make a vegetable stew (garlic, onion, tomato, zucchini, cauliflower, after that add what you like, I add artichoke hearts and black olives). Couscous takes only minutes to make. The night before, in a container layer couscous, the veggie stew, and cheese if you like. This warms up beautifully and I make a pot of stew on the weekend and have it all week.

Make a green salad and add some meat from dinner-grilled chicken salad, steak salad, taco salad, or ham and cheese for a mini-Julienne salad. Carry your dressing separately.

Good luck!

Try an assorted variety of gourmet cheese spreads and crackers, with some chowder or thick, hearty chili in a thermos, or something you can reheat in.

Salads are good. Try one with baby spinich, tomato, black olives, red onion, your favorite italian cheese, croutons, and italian dressing. Or try a salad with greens, diced apples, smoked turkey and chedder, pecans, and your favorite dressing.

Chips, salsa, and nacho cheese are also good.

Full English breakfast; egg, bacon, beans, tomato, chips, mushrooms and a couple slices of fried bread (cut up of course). Just pour the lot into a snap box and eat it like soup. However, it depends on what time of day you have 'lunch' as the word seems to refer to any meal between 12 noon and about 8pm. Soon, I suspect, every meal in the day will be called lunch. The word meal will cease to exist; perhaps this is the beginning of Newspeak.

sloppy joes

Cook some pasta night before and whatever takes your fancy! You could even do 2 or 3 different ones. To make it simple and quick you can buy some really lovely ready sauces. Pittabread or tortillas go really well with them! Nice and heallthy too!!

Turkey Wraps - can be made the night before

whole wheat tortilla wrap, or flour
sliced turkey breast sandwich meat
slice of swiss cheese
spinach
slice of tomato
some black olives

of course you can add or change on of the things you put in your wrap - they are easy to make and don't make a mess when eating - I either eat cold or sometimes microwave it

always do mine the night b4!! cous cous some really good ones out that the moment that are already seasoned (today i had cous cous and mackerel yum yum!!), pasta (whatever flavour filling you like), wraps as apposed to sarnies, salads chicken fish meatballs etc, hope this helps!!
