anyone know how to make the mock cream, like you get in cream slice cakes

Er... it's not mock cream, it's actual cream with sugar. Do you creme patisserie?

1 cup skim milk
1 cup nonfat cottage cheese

Blend in blender until smooth. Use as you would milk or cream. The
consistency is thicker than milk so that sauces tend to be a little
thicker.

you can make Chantilly cream by sweetening whipped cream with powdered sugar and some vanilla flavour. Real patissiere's cream is made by whipping equal amounts of cream and thick english custard to give a sweet soft filling to pastries and cakes.

I've got a Butter Cream filling recipe that I use between layers of cake and also on top as a tasty alternative to icing. I'm not sure whether it's the one you want though.

2 oz (50g) soft butter
4 oz (100 g) sieved icing sugar
flavouring and colouring as required

1. Cream the butter (whisk it until it's as white as possible) and gradually add the icing sugar (while still mixing).
2. Add flavouring and colouring.

Suggested flavourings:
1. A few drops of Vanilla essence (my favourite). Use the real deal, not vanilla flavouring. It's worth the extra money.
2. Almond essence
3. Finely grated rind of orange/lemon + a 5ml spoon of the juice.
4. 2 tsp coffee essence
5. 1 oz (25g) melted chocolate
6. 2tsp cocoa + 1 tsp vanilla essence
7. Chopped walnuts
