Help with chili?!?!?

Im having to make chili at work for about 15 people. I was hoping to put it all in a crock pot and let it simmer all morning and be ready for lunch. I guess Im also looking for something mild because I dont want to hear people complain all day about the chili being spicy. Any recipes that would work for this would be appreciated. Thanks

Slow Cooked Chili

INGREDIENTS
2 pounds ground beef
2 (16 ounce) cans kidney beans, rinsed and drained
2 (14.5 ounce) cans diced tomatoes, undrained
1 (8 ounce) can tomato sauce
2 medium onions, chopped
1 green pepper, chopped
2 cloves garlic, minced
2 tablespoons chili powder
2 teaspoons salt
1 teaspoon pepper
Shredded Cheddar cheese

DIRECTIONS
In a skillet, cook beef over medium heat until no longer pink; drain. Transfer to a slow cooker. Add the next nine ingredients. Cover and cook on low for 8-10 hours or on high for 4 hours.
Garnish individual servings with cheese if desired.

how about something different than the normal chili? Have you ever had White Chicken Chili?
Crockpot White Chicken Chili

1 pound navy beans, soaked
2 pounds boneless skinless chicken breast halves, cubed
2 tbs coconut oil
1 medium onion, chopped
3 cloves minced garlic
8 ounces chopped green chiles
2 teaspoons ground cumin
1 teaspoon oregano
1 1/2 teaspoons cayenne pepper
1/2 teaspoon sea salt
3 cups chicken stock

Put beans in medium pan and cover with water. Bring to a boil; reduce heat and allow to simmer 20 minutes. Discard water. Brown chicken in coconut oil. Put all ingredients in crock-pot. Stir to mix thoroughly. Cover. Cook on low 10-12 hours or high 5-6 hours.
Serves 6-8

There are a gazillion chili recipes and I'm sure you'll get a lot of them. Whichever one you make put one of the dropper bottles of Beano next to the crockpot and people won't have to suffer at work all day.

I don't know if a crock-pot will make enough chili for 15 people. There are twelve cups in a six quart crock-pot, so if everyone eats just a cup of chili you will be 3 cups short and you know there are people who will want more than a cup !!!!!So you might want to borrow and extra crock-pot and make a little more !!! Just a thought !!! Good luck !!!!

CHILLI CON CARNE ( Slow Cooker)
Ingredients :-
2 TABLESPOONS OF OIL
2 KG of TOPSIDE MINCE
4 Medium ONIONS FINELY CHOPPED

4 420 grm CANS OF BIG RED TOMATO SOUP
6 TABLESPOONS OF TOMATO PASTE
4 LEVEL TABLESPOONS OF MEXICAN CHILLI POWDER
6 TEASPOONS OF JOHN WEST GARLIC or 6 cloves
2 CUPS OF WATER

2 750 grm CAN OF RED KIDNEY BEANS ( DRAINED )
2 SLICED LARGE RED CAPSICUMS


STEP 1
SAUTé OIL AND ONION FOR 10 Minutes ON HIGH . STIR IN MINCE AND COOK UNCOVERED FOR 20 Minutes ON HIGH STIR EVERY 5 MINUTES . DRAIN EXCESS FAT .


STEP 2
STIR IN TOMATO SOUP , TOMATO PASTE , GARLIC , CHILLI POWDER AND WATER . COOK FOR 2 - 3 Hours ON LOW .


STEP 3
ADD CAPSICUMS AND RED KIDNEY BEANS COOK UNCOVERED FOR ANOTHER 1 Hour ON LOW

If you want the chili to cook in the crockpot and have it ready for lunch you should prepare everything the night before, or the meat won't cook all the way. Also, you may need more than one crock pot, or a very large crock pot for 15 people. Here is a recipe that will probably be enough if you have chips or cornbread to supplement.

2 lbs. of ground meat (I generally use 1 lb of ground meatloaf mix and 1 lb of ground turkey)
3 cans of kidney beans (I generally mix light and dark)
1 large can of stewed tomatoes
1 large can of diced tomatoes
1 large yellow onion (large dice)
1 poblano pepper (large dice)
3 cloves of garlic (fine dice)
1 bay leaf
1 sprig of thyme
Seasonings: Salt, pepper, cumin, chili powder, oregano, adobo

First brown the meat in a sautee pan with all of the seasonings above except salt liberally. It is important that you season every layer. If you don't want to purchase all these seasonings buy one pack of taco meat seasoning. Remove the meat from the pan and put it inside your crockpot. Leave the drippings in the pan.

In the same pan sautee up the onion, garlic, poblano (not really spicy as long as you remove the seeds and veins), with salt and pepper until they are slightly soft. The add these to the crock pot.

To that same pan add the tomatoes and season liberally with all the seasoning listed above except salt. Again if you don't have these seasonings just buy a chili mix. Check the amount, you may need more than one package or half of the package it it only calls for 1 lb of ground beef. The tomatoes just need to get warm. Toss them in the crock pot. Do the same thing with the beans.

Mix it all together with the thyme and bay. Then you can either start the crockpot or let it cool on the counter and then put it in the fridge until the morning. Then cook it on high for at least 4 hours. If you get up in the morning and it looks a little bit dry add 1/4 cup of water or chicken stock. It will cook down and thicken a lot though.

If you want to get really fancy bring some sliced scallions, cheese and cornbread to accompany.

I don't see anyone using cumin in their chili. This adds a delicious authentic flavor. I use massive amounts in my chili. It is not spicy at all, just lots of flavor. I don't like spicy.

If your chili is too thin to your liking, I like mine medium thick, add a can or two of refried beans to the pot to thicken it up.

Also, a dash of cinnamon is mighty delicious in it.

I would make it ahead on the stove the day before, 2 large pots, and warm it at work all morning in 2 large crockpots. Any that won't fit into the crockpots can be warmed in the microwave.

Be sure to have lots of soda crackers, as well as fresh chopped white onions and cheese for garnish.
