I wanna bake something today. . . . but i have no good ideas of what to do. So i would like some suggestions/ recipes of baked goods. Thanks!

Try this out -

Peanut Butter Cookies Recipe

Ingredients:
1 Cup peanut butter
1 Cup sugar
1 egg
1 teaspoon baking soda

Directions:
1. Cream the peanut butter with the sugar.

2. Stir in the egg and baking soda.

3. Roll into balls.

If the dough is too thin to roll let it sit 10 minutes and it will thicken.

4. Bake at 350°F. until the edges of the cookies turn golden brown.

Easy. Enjoy!!

You want to make stuffed French bread, and lemon bars.

LEMON BARS

For the Crust:
? lb. unsalted butter, room temp.
? cup granulated sugar
2 cups A/P flour
1/8 tsp. kosher salt

For the Filling:
6 extra-large eggs, room temp.
3 cups granulated sugar
2 Tbsp. grated lemon zest (4-6 lemons)
1 cup freshly-squeezed lemon juice
1 cup A/P flour

Preheat oven to 350oF. For the crust, cream butter and sugar until light in the bowl of an electric mixer fitted with a paddle attachment. Combine flour and salt, and with mixer on low, add to butter until just mixed. Dump th edough onto a well-floured board and gather into a ball. With floured hands, flatten dough and put into a 9x13" baking sheet, building up a ?" edge on all sides. Chill. Bake the crust for 15-20 minutes until very light brown. Let cool on a wire rack. Leave oven on. For the filling, whisk together the eggs, sugar, zest, juice, and flour. Pour over baked crust and bake for 30-35 minutes or until filling is set. Let cool to room temperature. Cut into triangles and dust tops with confectioner's sugar.

(If doubling recipe, double filling, but triple crust.)

BUTERSCOTCH BROWNIES

Brownies:
1 cup butter, melted and slightly cooled
2 cups packed light brown sugar
3 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1 cup chopped walnuts

Icing (optional):
1/2 cup butter, softened
3 cups sifted confectioners' sugar
2 teaspoons instant coffee granules
2 tablespoons water

Preheat oven to 350oF.
In mixer, combine2 cups light brown sugar and butter, beating well to mix. Add eggs and vanilla.
Sift together all-purpose flour, salt and baking powder. Stir it into the wet ingredients, and then add the nuts. Mix well.
Spread batter in a greased 11x7x2” pan and bake for 30-35 minutes or until a light gold. Cool in the pan for 10 minutes, then turn out of pan and let brownies finish cooling on a rack.
To Make Frosting: Dissolve coffee in the water. Cream 1/2 cup butter with confectioner's sugar. Beat it until light. Beat into the sugar mixture. Spread over the brownies. When frosting has set, cut brownies into squares.

BLUEBERRY SOUR CREAM COFFEE CAKE
serves 10 - 12

For topping:
? cup packed dark brown sugar
1? tsp. cinnamon
1 cup coarsely chopped walnuts
4 Tbsp. unsalted butter, softened slightly

For Cake:
2 cups flour
1 tsp. baking powder
? tsp. baking soda
? tsp. salt
? cup (1 stick) unsalted butter, room temperature
1 cup sugar
2 eggs
1 cup sour cream
2 tsp. vanilla extract
1 pint fresh or frozen blueberries

To make Topping:
In a medium bowl, combine brown sugar and cinnamon. Add walnuts and stir to combine. Add butter and mix with your fingers until mixture has a moist, crumbly texture. Reserve.

To make Cake:
Preheat oven to 350o. Grease bottom and sides of a 9-inch springform pan. In a large bowl, sift together flour, baking powder, baking soda and salt. In a large bowl using an elecric mixer on medium-high speed, cream butter and sugar until light and fluffy, about 2 minutes. Reduce speed to low and add eggs, one at a time, beating well after each addition. Add half of sour cream and beat until combined. Add half of flour mixture and beat until combined. Repeat with reamiing sour cream and vanilla, then add remaining flour and mix thoroughly. Using a spatula, gently fold in blueberries, stirring sparingly to keep batter from turning blue. Spread batter evenly in prepared pan. Bake for 45-55 minutes, until toothpick inserted in center comes out clean

Cabana Banana Bread

? cup butter, softened (1 stick)
2 csup firmly packed light brown sugar
4 med. size ripe bananas, mashed
4 eggs
? cup veg oil
1 cup pineapple yogurt
? cup crushed pineapple, very well drained
1 tsp. vanilla
? tsp. coconut extract
3 cups.flour
2 tsp. baking soda
? tsp. salt
? cup shredded coconut

Oven at 350oF. Cream butter and sugar till light and fluffy. Beat in bananas, beat in eggs one at a time. Blend in oil. Mix in all remaining ingred. except coconut. Divide batter between tow greased loaf pans. Sprinkle coconut evenly over tops of loaves. Bake 50-60 mts. Let cool 5 mts before removing from pans.

Peanut Butter Bread
Yield: 1 loaf

This is a very moist loaf with a rich peanut taste.

3/4 cup sugar
1/2 cup peanut butter
1 tsp.vanilla
1 3/4 cups milk
2 1/4 cups flour
4 tsp. baking powder(Seems like alot,but thats what it says!)
1/2 tsp. salt

Cream together sugar,peanut butter and vanilla. Add milk and mix well.

Combine flour,baking powder and salt. Add to creamed mixture and beat well.

Place in a greased loaf pan and bake at 350 degrees for 45-50 minutes or till golden brown.

Allow to cool for 10 minutes before removing from pan.

Chocolate Caramel Bars

? 2 1/2 cups all-purpose flour, divided
? 2 cups quick-cooking oats
? 1 1/2 cups packed brown sugar
? 1 tsp baking soda
? 1/2 tsp salt
? 1 1/2 cups cold butter or margarine
? 2 cups semisweet chocolate chips
? 1 cup chopped pecans
? 1 12 oz. jar caramel ice cream topping

In a bowl, combine 2 cups flour, oats, brown sugar, baking soda and salt. Cut in butter until crumbly. Set half aside for topping. Press the remaining crumb mixture into a greased 13x9” baking pan. Bake at 350 degrees F for 15 minutes. Sprinkle with chocolate chips and pecans.

Whish caramel topping and remaining flour until smooth; drizzle over top. Sprinkle with the reserved crumb mixture. Bake for 18-20 minutes or until golden brown. Cool on a wire rack before cutting.

2 of my favorites are chocolate chip cookies or brownies. Chocolate choices are always a good thing.
