Mussels Saganaki




Ingredients:
2 lbs. mussels (without the shell)
1 medium chopped onion
3 tbs olive oil
1 glass of white wine
1/2 tsp salt
2 cloves of garlic, finely chopped
1 dash of cayenne pepper
2 oz of feta cheese grated
1/2 tbs oregano
the juice of 1 lemon


Prep:
Saute onion in olive oil until tender then add the mussels. Add the wine with salt and bring to a boil. Then add garlic, and cayenne. Return to a boil, and simmer for 5 minutes. Serve in small frying pans and sprinkle with feta cheese and dill. You can grill a little bit.

Saganaki is a Greek dish..yes...it is made with Kefalotiri cheese. First you slice it about 1/2 inch thick, then dip it in water...dredge it in a little flour then coat it in an egg and milk mixture. There are specific pans used for the next step...olive oil is heated to high temp on the stove in a saganaki pan...place the cheese into the oil and brown on both sides. Put into hot oven until cheese is very soft and crust is golden. Take out of oven and pour off oil...leave cheese in pan....put pan into proper "holder" . This is the fun part...pour half an ounce of brandy or ouzo onto pan and ignite...flames will be quite high...after 5 or 10 seconds, squeeze juice from a lemon wedge onto cheese. Serve by cutting pieces of cheese and putting on grilled bread or pita. The mussels are obviously a variation of the original. I would do this by steaming mussels in white wine then placing in pan and crumbling cheese on top..then put into oven and follow the next steps as above. By the way..it is customary to yell "OPA" when you are flaming the cheese.
