What is the white stuff that comes out of fish when it is cooked?!


Question:

What is the white stuff that comes out of fish when it is cooked?

It oozes out of the fish, especialy salmon (I think I've seen it on shrimp as well) and is kind of spongy/rubbery when solid. Is this protein?


Answers:
It's just a little bit of fat and protein oozing out. It's like an internal thermometer. When you see it start coming out you know the fish is done. It's totally edible and good to go.
