I need suggestions on some quick dishes I can cook?

I have a family of 7 and dont have much time on my hands. Something homemade but that doesnt take too much of my time I dont have!! Any ideas?

chicken dressing peas sweet tea fish slaw fries huspuppies chicken steak bean potatoes

when i'm short on time, i cube chicken breast, brown and season it, then add a box of frozen peas. once the peas start to get soft, i add enough water for a box of flavored rice, like rice-roni or goya. then i add the rice according to the recipe and when its done, its a one pot dish that takes maybe 10 minutes to put together, 25 minutes to cook

Rachael Ray has great 30 meal ideas, she has books, a tv show on food network, magazine, web page. I watch her show when I have time and I also get her mag which you can pick up at the grocery store, then if I see somthing I like I make it my way

Yummy chicken with veggies

1. Cut up the chicken in small pieces, wash and boil in water with a dab of salt.
2. after 10 minutes drain the water.
3. On a pan/pot add some cooking oil, 1 medium onion, a little ginger and garlic, some fresh pepper.
4. When the onions are light golden then add the chicken. Cook for 10 minutes. Give it a stir now and then so it does not stick at the bottom.
5. Add some beans, peas, carrot, celeries, broccoli/coliflower or any other veggies you like
6. After couple of minutes see if the chicken is done (make sure that the chicken has been cooked for more than 20 minutes before tasting)
7. Just before you take it off the stove add some sliced tomatoes, bell pepper, cilantro and if you want some cheese (do not add cheese if the chicken is not boneless)

scrambles cheeseburgers- brown burger drain grease and mix in velveeta (or generic) cheese.
chicken casserole- boil whole chicken, pick off bone, mix in cream of muchroom soup, cream of celery soup, small thing of sour cream, can of mixed veggies put in baking dish top with crushed crackers and a little butter bake for about 30 minutes at 350 degrees

there are 5 of us so i know all about cheap easy dinners!

Here's a few ideas:

1) Roll some boneless, skinless chicken breasts in grated Parmesan cheese. Cook in a pan with olive oil until each side is light brown. Delish! Doesn't need any other spices! Add the sides of your choice.

2) MIx up 2 packs imitation crab with 1 diced tomato, 1/2 cup of both red and green onion, 1/2 cup plain yogurt, 3 oz. crumbled feta cheese, 1/4 cup mayo, and add garlic salt and pepper to taste. Tear up some lettuce, and cut open a package of pita bread. Lay it all out on the table have everyone make their own pocket sandwiches. (With a family of 7, I'd double the recipe). A few lemon wedges on the side completes it.

stirfry (you can add any meat and veggie combination) it cooks really fast and is nutricious and a meal all in one

barbecue Its not mess because food is cooked outside on the grill. with seven kids i would go for grilled burgers or hot dogs or chicken drumsticks. You can serve things like grilled corn on the cob on the side, pasta salads are always good (they make some good ones on the grocer shelf) potato salad either home made or bought in the deli of your grocery store, baked beans, coleslaw, a tossed salad.

meatball subs, tacos, hamburger helper is good when you are pressed for time or in a rush, or just plain tired. I personally like the tacos because all you have to make is the meat mixture and put small bowls of the fixings on the table like shredded lettuce, cut up peppers, shredded cheese, sour cream, onions, olives...etc and everyone can make their own the way they like it.

a chef salad is always nice when its hot outside and is a meal in itself as it has meat, greens and cheese in it

the back of a box of bisquick has some really neat fast meals and they are all very good and quick to make. My favorite is the cheeseburger pie.

Home made pizza. Use either one of the pizza crust mixes in a box or even french bread dough and add your favorite toppings. Its fun making pizza at home with the kids

Spaghetti is always a good choice and goes a long way

crockpot meals like a roast or here is one that someone sent to me that sounds good: CROCKPOT CHICKEN: 8 oz can tomato sauce, 1 pkg. spaghetti sauce mix, 1 cup water, 4 oz. can mushrooms (do not drain), and chicken parts. Put all in your crockpot for 4 to 5 hours. I would serve this with mashed potatoes and a vegetable.

meatloaf is always good and a meal stretcher

chicken and stove top casserole:


spray bottom of 9x13 pan with cooking spray
layer the bottom with boneless, skinless chicken breasts
season chicken (slt, pepper, garlic, etc)
mix 1 can of cream of mushroom, 1 can cream of chicken and some milk or sour cream
mixboxes of stove top stuffing ( cornbread or chicken flavor) with just enough water to make is wet and a spoonfull of butter.
pour soup over chicken
spoon stovetop over soup
bake in 350 degree oven for 30-40 minutes or until chicken is cooked through and stove top is crispy.

doesn't sound like much i know, but it is SO tasty and easy. AND it can be made up ahead of time and cooked later. the prep time is a mtter of minutes and you don't have to stand over it while its cooking.

Easy Lasagna
8 ounces lasagna noodles
1 pound lean ground beef
1/2 cup chopped onion
8 ounces mushrooms, optional
1 jar (about 16 ounces) spaghetti sauce, your favorite
1 teaspoon garlic powder
1/2 teaspoon salt
1 teaspoon dried leaf oregano, crumbled
1/2 teaspoon dried leaf basil, crumbled
1 1/2 cups ricotta cheese
2 cups shredded Monterey Jack cheese
3/4 cup grated Parmesan cheese

Cook lasagna noodles according to package directions; drain and set aside. In a large skillet, brown beef, onion, and mushrooms; drain well. Stir in spaghetti sauce, garlic powder, salt, oregano, and basil. In a 2-quart buttered baking dish (about 11x7x2-inches), layer 1/3 of the lasagna noodles, 1/3 of the sauce and 1/3 of the ricotta cheese, Monterey Jack cheese, and Parmesan cheeses. Repeat layers twice. Bake lasagna for 30 minutes, or until thoroughly heated and bubbly. Let stand for 8 to 10 minutes before cutting and serving. Serves 6 to 8.

BAKED ZITI

Ingredients:
6 cups (16 oz.) Ziti, uncooked
3 cups (about 26-oz. jar) spaghetti sauce, divided
1-3/4 cups (15 oz.) ricotta cheese
2 cups (8 oz.) shredded mozzarella cheese
1/4 cup chopped fresh parsley or 1 tablespoon dried parsley flakes
1 egg
1 teaspoon dried oregano leaves
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
3 tablespoons grated Parmesan cheese


Instructions:
Heat oven to 375°F.
Cook pasta according to package directions for 9 minutes; drain.
In large bowl, stir together hot pasta, 1-1/2 cups spaghetti sauce, ricotta cheese, mozzarella cheese, parsley, egg, oregano, garlic powder, salt and pepper.
In 13 x 9 x 2-inch baking dish, spoon pasta mixture; top with remaining 1-1/2 cups sauce.
Sprinkle with Parmesan cheese; cover with foil.
Bake 30 minutes or until hot and bubbly.
10 servings (1 cup each).

Go get about 4 bonless skinless chicken breasts, chinese stir fry sauce, frozen oriental blend vegetables, bag of fresh pea pods in the produce section, white rice. this shouldnt take you more than a half a hour all together and its real simple...just follow the direction onthe back of the rice and frizen vegies for stir fry and make sure u do not open the lid off the rice cause that will just mess it all up.

Quick Dish
4 ounces egg noodles
1 cup leftover diced chicken or turkey
1/3 cup milk
1 can cream of chicken soup
Grated cheese

Cook egg noodles in boiling, salted water until tender.

Add milk to chicken soup in a casserole dish. Drain noodles and add to dish along with diced chicken or turkey. Mix all ingredients thoroughly. Sprinkle with grated cheese. Bake at 450 degrees F until hot and bubbly.

Serves 4.


Quick and Easy Eight Layer Salad
This variation of an eight layer salad is so easy and tasty. This recipe is nice for a potluck or family picnics.
INGREDIENTS:
8-12 ounce package salad mix, any variety
12 ounces cottage cheese
1/2 cup red onion, chopped
12 ounce package frozen peas, thawed
1/2 cup shredded cheese (I used colby-jack cheese)
6 hard-boiled eggs, chopped
1 cup Ranch salad dressing
1 cup crumbled bacon bits (can use packaged or real bacon, fried)
PREPARATION:
In a large, clear bowl or baking dish, layer all ingredients in the order listed. Chill in the refrigerator for at least an hour. This salad will serve at least 6 to 8 people. - Barb


Quick No-meat-a Vegetarian Fajita Recipe

INGREDIENTS:
1 package Smart Strips Steak Style
1 green pepper, sliced in strips
1 yellow pepper, sliced in strips
1 onion, sliced
1 tomato, chopped
salsa
1 small tub of low fat sour cream or soy sour cream
cheddar cheese or soy cheese, shredded
Fajita seasoning packet
cooking oil or spray
4 flour tortillas
PREPARATION:
In a small amount of cooking oil or spray, saute the Smart Strips Steak Style and add the fajita seasoning. Set aside in an oven-proof dish or skillet.
Saute the peppers and onions separately for 2 to 4 minutes, mixing often (do not over cook; you want them to be a little crunchy.) Saute each item individually, then add it to the dish with the Steak Strips.

After each item has been added, place dish in a 250 degree oven to keep warm while you prepare the rest of the meal. Dice tomato and set aside.

When everything is ready, heat flour tortillas in the microwave. Set everything out and assemble fajitas.

Serves: 4

Quick Vegetarian Mushroom Stroganoff Recipe

INGREDIENTS:
1 package Onion Mushroom Soup and Dip Recipe mix
2 pounds mushrooms
olive oil
1/4 cup red wine
2 cloves garlic, chopped
fresh or dried parsley to taste
PREPARATION:
Sautee mushrooms and garlic gently in oil, meanwhile preparing the Onion Mushroom Soup mix with 1/2 the amount of liquid needed.
Pour soup mix and wine over mushrooms. Heat through, then top with parsley to taste.

Serve over rice or pasta


Aloo Matar (Indian Potatoes and Peas)

There are many, many different ways to prepare Aloo Matar, Indian spiced potatoes and peas. Some recipes use a coconut base, and others simmer the potatoes in a tomato sauce. This basic recipe uses a few simple spices for a flavorful and tangy Indian food dish that is both vegetarian and vegan. Serve with rice, if desired.
INGREDIENTS:
3 tbsp vegetable oil
2 onions, diced
3 cloves garlic, minced
1 tsp fresh ginger, minced or grated
1 bay leaf
4 potatoes, chopped
1 1/2 cups peas
2 tbsp water
1 1/2 tsp garam masala
1 tsp paprika
2 tbsp chopped fresh cilantro
salt and pepper to taste
PREPARATION:
In a large skillet over medium high heat, sautee the onion, garlic and ginger for 3 to 5 minutes, or until onions are soft.
Add the bay leaf, potatoes and peas and stir to combine. Add the water. Cover and allow to cook at least ten minutes, or until potatoes are almost softened.

Add the garam masala and paprika. Cover and cook another 8 to 10 minutes.

Remove from heat. Stir in the cilantro and add salt and pepper to taste. Serve with rice if desired.

Indian Palak Paneer with Ricotta
INGREDIENTS:
2 tbsp olive oil + 2 tbsp
2 cloves garlic, minced
1 onion, diced
1 tbsp fresh ginger, grated or minced
2 tsp cumin
1 tsp coriander
1/2 tsp turmeric
1/2 cup sour cream
3 large bunches of spinach
8 ounces ricotta cheese
dash salt, to taste
PREPARATION:
In a large saucepan over medium heat, sautee the garlic and onion in 2 tablespoons of olive oil for a minute or two. Add the ginger, cumin, coriander and turmeric, stirring, and allow the spices to cook for another minute.
Reduce the heat to medium low and add the sour cream, stirring to combine, then the spinach.

You may need to add the spinach a little bit at a time, waiting for it to cook down before adding more. Allow the spinach to cook until done, about ten minutes.
In a separate skillet, fry the ricotta in 2 tablespoons of olive oil until lightly browned. Add the cheese to the spinach mixture.

Cover and cook on medium low for 5 to 7 more minutes. Add a dash of salt and serve hot.

Chai Tea
Impress your friends with a pot of fresh homemade chai spiced tea! I like to use maple syrup for a richer taste, instead of the traditional honey.
INGREDIENTS:
1 cinnamon stick
1 tbsp chopped cardomon pods
2 thinly sliced pieces of fresh ginger
1 tbsp whole cloves
dash nutmeg
1 tsp whole peppercorns
dash garam masala (optional)
1 vanilla bean (optional)
4 cups water
1 cup milk (dairy or soy)
liquid sweetener (honey, agave or maple syrup)
PREPARATION:
Add spices to water in a large pot or saucepan and boil for at least 15 minutes, or to desired strength. Remove from heat and strain. Add milk or soymilk and mix well. Add sweetener to taste (about one teaspoon per serving).

INGREDIENTS
1 (12 ounce) package medium seashell pasta
1 (10 ounce) package frozen chopped spinach, thawed
2 eggs
1/4 cup olive oil
1/2 cup bread crumbs
1 1/2 (26 ounce) jars tomato basil pasta sauce
1 (8 ounce) package shredded Cheddar cheese
1 (8 ounce) package shredded mozzarella cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain. Bring 1/2 cup water to a boil in a saucepan, and cook the spinach 4 to 6 minutes, until tender.
Place the cooked pasta in a medium bowl. In a small bowl, whisk together the eggs and oil. Toss the pasta with the cooked spinach, egg mixture, and bread crumbs.
Cover the bottom of a 9x13 inch baking dish with 1/3 of the pasta sauce. Pour half of the pasta mixture into the baking dish, and cover with another 1/3 of the pasta sauce. Sprinkle with half of the Cheddar cheese and half of the mozzarella. Layer with remaining pasta mixture, and top with remaining sauce. Sprinkle with the rest of the Cheddar and mozzarella cheeses.
Bake 45 minutes in the preheated oven, or until bubbly and lightly browned.

I used to cook on the weekends for meals during the week and freeze the meals. Then whip up a green salad changing it up by adding cheese, or mandarin oranges, or almonds or sunflower seeds, whatever your family enjoys.

Soups and stews are easy and freeze well.

Spaghetti is always quick and easy and you can feed a lot of people with little cash.

I would make a 4-lb meat loaf using Lipton Onion Soup recipe and freeze half of it for another time.

Quesedilla's are easy - Cheese, cumin, cooked chicken or turkey or hamburger, refried beans on one tortilla, cover with another tortilla, in the oven on a cookie sheet for about 10 minutes at 400. These freeze well too.

Enchilada casserole - canned enchilada sauce, stir in sour cream, corn tortillas, cooked chicken, beef or turkey, black olives, mild peppers in the can, layer like lasagna, cover with tinfoil in the oven 350 for approx. 30-40 minutes.

macaroni and cheese with spam or ham you can't go wrong takes about 10 min
