How can I keep flair ups down?!

How can I keep flair ups down?

I love to grill...we have a gas grill...but I always burn the outside...I tried turning the heat down...using foil...ect...but it always flairs up on me...I want to do some steaks tonight any ideas???

use the grill to colour them once they have a nice crust formed and before they burn put them in a pan on the grill the pan will stop the fats burning and you can even use any of the juices that come into the pan as a base for a quick sauce. I pan fry on the grill all the time - its the only way to prevent the heat from dictating the foods condition - that's the chefs job!

clean out the grill, i mean totally over haul it, the less grease you have on the inside the less likely you are to have a flare up

There is a very simple solution to this and it works well.
Get a spray bottle and fill it w/ water, anytime you see a flare up just give the coals a quick spray, but not too much, you don't want to put it completely out. I know this works because this is what I do.

Keep a spray bottle of plain water with you as you grill. When you get a flame or two just spritz, this works well.
