Quick enchiladas?
i need to make a dinner tonite and i want to make enchiladas but i dont want to boil chicken all day and strip it off the bone...but i also dont want the chicken in it to be dry....any suggestions?

When I make enchiladas, I just buy some foster farms chicken breast and boil it, It doesnt take too long.
Then I use two forks and shred it while its still hot. (Its much easier that way)
After shreding it I run it under cool water to cool off and make the enchilladas.
That saves alot of time with the chicken, Its all white meat, and is not dry at all. Very Yummy!

you can buy boneless skinless chicken breasts. they even have boneless skinless chicken tenders too. than add your veggies like green peppers, onions, mushrooms, rice, whatever you want in them and fill your tortilla shells. Place on a baking dish and top with taco sauce and lots of shredded cheese and bake

You can make them with ground beef instead of chicken, for a change. Cook an onion and a pound of hamburger meat, drain, add a half cup of sour cream and a cup of grated cheddar. Use a regular red enchilada sauce, and dip the tortillas into it before filling them.
Go buy a can of Enchilada sauce, one can of chicken (chicken of the sea sells chicken in a can) cheese 3 types (your preference). Of course do not forget the corn tortillas!
In a cassarole dish, you are going to place a little sauce at the bottom, then your totillas,chicken, cheese, diced onion if you like and repeat. It will be like a lasagna but I call it an Enchilada cassarole. Micro wave for 5-10 minutes covered, or in a conventional oven for 12 minutes.
When serving top with diced lettuce, cheese and olives. Or just add a salad to the meal. Good Luck!
It won't take all day and it'll taste great! You can also add cilantro on the top before you serve.

Well yo don't have to use chicken in my region (Chihuahua) we use chesse instead of chicken or potatoes and carrots
Make them with ground meat instead.Then take the meat and put it in the sauce mix.I tear my tortillas in to pieces and do a layered thing.that way I spoon the meat around where it is needed.The same with the diced onions I use ...Never dry.
