Simple hors d’?uvre idea?
I'm looking for a simple snack food idea for a "retirement" party on Sunday. Many people are bringing things, so it doesn't really need to feed more than 20 or 30 people. It won't be served until after a mass and celebration at a school, so it would have to sit in the car for probably 60-90 minutes, which makes me think a cold dish that I can keep on ice would be best.
I was actually thinking about making tzatziki, but I wanted to see what ideas everyone else has. Thanks!

my no-fail recipe is antipasto skewers.
just get the ingredients for an antipasto platter- cheese, peppers, italian meats, olives, etc- and buy bamboo skewers like for a shish kabob.
thread ingredients cut into bite-sized pieces, and you're ready t ogo. since this dish doens't need to be ICE cold, it's perfect to sit in a cooler, etc for a few hours.
plus, it's perfect for a party, since it's not messy, there's no cleanup, and it's easy for a social gathering where people are talking, etc.

I would consider making a 7 layer dip with tortilla chips. Take a lasagna dish, and put down a layer of salsa, sour cream, guacomole, refried beans, olives, jalapenos, and shredded cheese. You can mix and match as your taste desires. Enjoy.
Tzaziki is a great idea, especially served with raw veggies for dipping.
Chilled fruit salad is always a nice surprise among savory hors d'oeuvres and is easily eaten with toothpicks. I like to combine melon, pineapple, grapes, and berries. If you want something sweeter, serve a brown sugar-sour cream dip with the fruit.
Try taking pita bread, spreading pizza sauce on it and sprikling parmesan cheese then putting it on broil for a few minutes in the oven. It's super yummy and quick!
I'll admit, I never did the "inverted" part; I just scooped them out. It turned out just yummy. I've also substituted cognac with balsamic vinegar (good stuff). Good luck with your appetizer! Tzatziki is a great idea, too.
Stuffed Cherry Tomato Appetizer
What you'll need:
- 48 cherry tomatoes
- Salt
- 1/2 lb sharp cheddar cheese (grated)
- 3 oz. cream cheese
- 2 Tbsp cognac or other good brandy
- 2 oz. pimiento stuffed green olives (chopped)
- Tobasco sauce
- 1/2 cup parsley (minced)
First, cut a thin slice from the stem end of each tomato and scoop out center pulp.
Next, sprinkle inside with salt and invert the tomatoes on a paper towel for 10 or 15 minutes. Combine the cheeses and cognac. Blend until smooth and then add olives and 2 or 3 dashes of Tobasco sauce. Fill the drained tomatoes with the cheese mixture, sprinkle with parsley and serve it up!
Another idea which is simple & everyone seems to like it is a "salad" made of cottage cheese, non-dairy whipped topping like cool-whip, dry jello (lime flavor seems to work best) and crushed pineapple. It can all be made with low fat or non-fat ingredients so may taste like it is full of calories but isn't. Get the large size small-curd cottage cheese container, add a 12-ounce (or 16 if you can't find 12) container of the cool-whip (you'll need to let the whipped topping thaw before you make this), one regular size package of flavored gelatin mix like jello in a large bowl and mix them all together until well blended. Add a small can of crushed pineapple with as much juice squeezed out of it as you can & mix that into the rest, let chill in fridge for about 2 hours to give the gelatin time to set up and you're all set. This is also fairly inexpensive to make. Usually the most expensive item is the cottage cheese.

Hummus is very tasty also and there are so many ways to make it. If you are pressed for time, you can take an ordinary hummus and jazz it up by adding more garlic, fresh lemon juice, roasted red peppers then blend again in food processor....Mmm yumm!
Serve with veggies or pita chips for dipping.
Also, what about mini fruit kabobs w/ a honey yogurt dipping sauce.

Also, how about some lil finger sandwiches?
Try cream cheese and smoked salmon on pumpernickel with finely sliced scallions.
Butter and cucumber on white with a little fresh dill.
or
Egg salad and watercress on wheat.

This has been a hit for me and it's not expensive.
Crackers with thin fillet of smoked salmon and a cream cheese ,dill spread.
I use a nice wheat cracker. You could put the tray together before hand or put it together once your there. Just mix cream cheese with some dry dill weed. Or you can put it out for people to serve themselves.
This is going to sound odd....but the flavor is amazing!!!
Soft goat cheese
Lemon Curd
Pistachios
Plain water crackers
Slice up the goat cheese. Drizzle with lemon curd. Sprinkle with pistachios. Use the crackers to scoop is up! OMG......it's yummmmmmm!
