I'd say Burgers on the grill, hot dogs over the fire, and fresh caught Minnesota Walleye are the way to go.

If you have a grill, that is easiest: steaks, brats, burgers, chicken, shrimp, salmon...kabobs and the like!! With sides like baked taters or hashbrowns, corn on the cob, fresh fruit, big veggie salads.

If you're cooking in, you can do a ton with a bag of boneless/skinless chicken breast:
cook up in some olive oil and garlic with a side of rice or pasta.
Dice it up and cook in the oil and garlic, add your favorite veggies and some pasta (cooked) right into the skillet and toss over medium heat.
Cut into strips and saute up with some fajita seasoning, some peppers and onions and serve with warm tortillas.

Loosemeats are always easy, brown ground hamburger, drain and mix with some ketchup, mustard, worchestier sauce, horseradish, brown sugar, salt, pepper, etc... keep tasting until it's where you like it and serve on crusty buns.

Keep salad stuff in the fridge, especially if you have kids, mine like goldfish, pepperoni and all kinds of stuff in them, and they can fix it up themselves! Yogurt, fruits, nuts, whipped cream, ice cream, makes good healthy mix-able snacks too!

Last week I tried something I've never tried before and my picky-eater family really loved it. I cut up potatoes, smoked sausage, bacon, onions, added some ranch seasoning powder and put it all in individual pieces of aluminum foil and cooked them on the grill. After it was cooked, I added shredded cheese to them and everyone though it was delicious. I now have to make it again. Maybe you can name it for me. I have no idea what to call it except a mess.

When it's hot, it's great to eat light. This may sound quirky, but it's really refreshing and yummy: cut up some melon (honeydew, cantaloupe, watermelon) and some cheese like jarlsberg or pepperjack, put a few of each onto skewers and put out dipping sauces like honey mustard or bbq. Tasty, easy, not so hard on the environment or the wallet as barbecuing!

on hot days we avoid cooking so as to not heat up the house.also we don't like to eat hot stuff on muggy days, so we make turkey and cheese roll ups with tortilla wraps

Spicey Chicken Kebabs

Take four chicken breasts at least half hour before you want them (leave longer for a stronger flavour, overnight is mind blowing!) and chop into cubes.

Make marinade of:
2 garlic cloves
2 tbsp fresh chopped coriander
1 tbsp ground coriander
1/2 tsp chili powder
3 tbsp lemon juice
2 tbsp very low fat yogurt
salt and pepper

Place the chicken in the marinade, covering all meat.

Chop into similar cube sizes; onion, green, red and yellow pepper and half mushrooms and leave whole cherry toms.

Just before serving, thread on skewers, meat then veg, meat then veg etc. Grill until browned or BBQ if it stops raining!

Serve with plain boiled rice....good for the waistline too!

All year round I like meals that I can use more than once. I always cook a little bit extra. Not double, but more than I really need. For example I might make for one meal: Beer Can Chicken, Grilled Veggie Kebabs, Baked Potatoes. Then I turn this into a pasta salad for lunch later in the week with the left over chicken and grilled veggies. I just top it with a premade vinegarette and some parm cheese.

One veggie that I really like is cabbage, especially in the summer. It's so crispy and sweet, but using a whole head is a pain. So one day I will take 3/4 of the head and make cole slaw. One night I will serve it with grilled chicken and grilled corn. Another next night make fish tacos, the rest of the cabbage with avacado cream. And later in the week make pulled pork sandwiches with the rest of the cole slaw.

Make sure you have a ton of salad fixing around. If you had made extra grilled chicken or fish from earlier you can top a salad with that for a light dinner or lunch.

Cold Chinese Sesame Noodles

INGREDIENTS:

* 1 pound Chinese-style noodles
* water for boiling
* 2 tbsp sesame oil + 1 tbsp
* 1 tbsp peanut butter
* 1 tsp water
* 2 tsp soy sauce
* 1 tbsp tahini
* 1 tbsp cooking sherry or rice vinegar
* 1 tbsp maple syrup
* 1 clove garlic, minced
* 1/2 tsp fresh ginger minced or grated
* 3 green onions, sliced

PREPARATION:
Cook noodles in water for just a few minutes, so they are just beginning to soften but are not yet all the way cooked. Drain.

In a large skillet, fry the noodles in 2 tablespoons of sesame oil, stirring frequently. Allow to cook for 3 to 5 minutes, or until noodles are soft. Remove from heat.

In a large bowl or blender, whisk or blend together the 1 tablespoon of sesame oil, peanut butter, water, soy sauce, tahini, sherry or rice vinegar, maple syrup, garlic and ginger. Toss this mixture with the noodles.

Stir in the green onions.

I cook what I can in the a.m. before work and put it in a crock pot on warm.I love taco salads,nachos,fajitas,tuna salad or meaty pasta salads.Easy is the key for me,and no heat in the kitchen...
