My mother used to make nettle pudding, recipe ?

one of my favourite meals as a nipper in summer was me mothers nettle pudding, I know it had oatmeal in it but it was food to die for, does anyone have a recipe for this ? ma died in 1991 and left no trace of it.....thanks...

There are a huge number of variants of nettle pudding, but the Scottish strain is the one which more often than any other uses medium oatmeal as the filler, so I have chosen one from North of the Border which hopefully can resonate with your memories a little?

Scottish Nettle Pudding
----------------------------
young nettle tops: enough, steamed for 15 minutes and finely chopped, to leave you with 225g of cooked weight. (Remember to squeeze out excess water before weighing and chopping: nettle tops are like spinach in that regard.)

225g green/spring cabbage or brussel sprouts, thoroughly chopped
225g onions and/or leeks, chopped
225g medium oat meal, lightly oven toasted if preferred
15-20cl beef or lamb stock
1 beaten egg
1 tbs freshly chopped parsley
4 rashers of bacon, diced or in lardons, fried
salt and freshly ground black pepper

Mix the ingredients well with enough of the stock and the rendered bacon fat to moisten thoroughly. Fill your well buttered pudding bowl, making sure to settle the mixture so you avoid leaving unwanted 'holes' at the heart of your pudding. Cover with foil and secure with string or a strong elastic band. Steam for at least 3 hours to ensure even cooking of all the different densities of vegetable and serve with a hearty gravy or maybe a cheese sauce: some say 'have both'!

Try looking at Hugh Fearnley-Whittingstall's books and DVDs, particularly 'a cook on the wild side'. I remember him cooking Nettle gnocchi and Dock Leaf pudding.
