Healthier chicken?

i have some chicken quarters (legs and thighs still attached together) and I want to cook it tonight. I am trying to get my family to eat healthier, but I dont want to fry the chicken, its too hot for something heavy like chicken and noodles and mashed potatoes and not to speak of all the boiling water....sheesh. I know i can roast it...but how would I season it? how long to cook it? The pkg says there's 5 pounds of chicken goodness. How do you make your chicken.

I dont have a grill, just a little bitty George Foreman grill that I got with my toaster for my wedding, and a this chicken I am talking about will NOT fit...lol...

350 degrees, top it with italian salad dressing, and bake it,
or with anyother dressing..you would be surprized how good that is, then have a salad...veggies, youcann cook in microwave to keep house cooler
or yes...foil packets would be awesome..
350 degress put everything in..cut up potatoes, bit of onion, I myself would have to open to brown things up at the end tho

again tho..the oven warms up your house too..but you got to cook anyway

A chicken and rice casserole is always great. I'm sure you could find some great recipes at foodnetwork.com. That's where I get most of my recipes.

OK this is what you should do you should go buy a bigger container to put the chicken in . then you should skin the chicken so it won't have any fat..then take the seasoning and put it all over the chicken ...and then put it in the oven and wait for it to be ready ..and for a side you should make a salad with a potato salad ..and then for desert a fruit salad so there so your family can be healthy.

cut the leg quarters into ls and thighs..save the thighs for jambalaya and fry the legs or make a gumbo out the thighs and grill the legs or smoke the legs and make chicken and dumplings outta the thighs or just separate the two parts from each other and start the thighs half hour earlier than the legs..when the legs get done THEN the thighs will be too!
put the legs in the toaster oven and set it on 325 put some seasoned salt on them legs..like i said save the thighs for gumbo or jambalaya or dumplings cook the legs for an hour at 325 turning them once during cooking use the little wire rack that comes with the toaster oven put the legs on it.Hers a wacky thing to do with a forman grill...De bone the leg quarters..I know t ain't easy but hay...you have to put a weight on the now boned and season salted leg quarters and let them kick for 30 mins..check internal temp for doneness 160

Here's a easy chicken & rice recipe my dad taught me:
First wash the chicken and then season it {with salt, pepper, sage & rosemary} put it in a casserole dish and put either Chicken Stock or water in just enough to cover the chicken, cover the casserole dish and put it in a preheated over {375 degrees}, cook until the chicken is almost done {for about an hour to an hour in a half} remove the chicken and add Chicken Rice-A-Roni {with the seasoning packet} put the chicken back on top, recover and put it back in the oven, when the rice cooks {look at the directions on the box} the chicken will be ready, i usually stream a vegetable and make a salad to go with it, Enjoy!
