If your cooking for a six-year-old's palate, that sounds pretty good. Maybe adding some shedded mild cheddar cheese at the end would help. Most of the six-year-olds I know want comfort food. It's hard to get more comfortable than chicken and stuffing.

Place the chicken on a sprayed or greased baking sheet. Brush with mayonnaise, and sprinkle with seasoned bread crumbs (Italian flavored is good). Bake at 425o until done. Kids love this stuff!

If you don't have seasoned bread crumbs you can add Italian seasoning and garlic salt and maybe some parmesan to some regular bread crumbs.

you could still do the stove top stuffing thing, but let it cool down, lay out the thinly sliced chicken breasts, place some stuffing on each piece, roll up, and place seam side down in a baing dish and bake for approx 15-20 minutes, depending on the thickness of the breast slices.
if you have a jar or can of gravy, when the dish is just about to come out of the oven, you could pour some on top of the rolls and let it bake a few more minutes.

Take your chicken lay it in a glass dish coated with olive oil....
place sour cream and onion mixture or yogurt and spices on top of the chicken and then place your stove top(mixed according to directions) on the sour cream.
cover with foil cook for 20 min to 1/2 hr

salsa(squeeze of lime) also works well in or out of the sour cream

Saute the chicken for about ten minutes, or until done. Heat oil (I prefer olive, but others will work fine) in skillet over medium high heat. Add some minced garlic, or even just garlic powder, maybe a tsp. Add about 2 tsp of basil. You can use oregano, but basil is more subtle a flavor. Add your chicken, stir, stir. Make some box mash potatoes, but before adding the flakes, add a couple shakes of garlic. Mix up and add 3 good squirts of ranch dressing. Yummmmy! Cook some corn on the side, add a little margarine for flavor after have drained the water. Don't know a single hungry kid that would pass on that meal.

children love finger foods.
season the chicken with a little salt and pepper. if you have sliced ham, place a slice of that on each piece, then a slice of cheese (whatever you have) roll them up and secure with a tooth pick. dredge in seasoned bread crumbs and fry in shallow pan turning once till done.
serve bbq sauce on side to dip.
