How to get that nasty smell out of fish?

Sometimes when I cook fish it smells like potatoes or sort of a metallic smell. How do I get rid of that smell. Someone suggested lemons? Does that work.

the nasty smell you refer to comes foom ammonia (mostly, I am simlpifying, some products are amines), a product of protein decomposition in the absence of air, it happens when fish is transported/stored.
Yes lemon works perfect as it decmposes ammonia.
in a large bowl mix juice of one lemon, 2 cups of ice cubes and a 1 quart of water, soak fish 15 minutes, drain and dry well...

onions work better than lemons . good luck .

Wash the fish in concentrated lemon or lime juice before cooking it. It works well for all meats and eggs.

You can minimize the smell by using a conventional oven. The microwave makes it a hundred times worse!! Other than that, vinegar or lemon will get the smell out of plastic containers, but do nothing for the air. I have no idea what will get the smell out of the air except time and ventilation!!

First wash it well with water. When you are ready to cook it, cover it with a lemon juice. Do not spray it over too much or it will ruin the taste unless you want the lemon taste. Same goes with the Onion unless you like to cook Onion with fish, I would not use it too much of it. Red Wine also helps get rid of the smell.

I won't repeat the good answers already given, I'll just add that the fresher the fisher the less it smells (and the better it tastes) so be aware of that when you're buying. Most supermarkets don't get a fish delivery every day so If you're buying your fish from there find out when they get their deliveries and only buy on those days. Preferably though find yourself a good fish monger who gets their fish fresh daily.

The best way to avoid 'fishy' fish is to only buy fresh fish. If you buy from a chain grocery store, you are not getting fresh fish. If you have to open a freezer door to get it, you're not getting fresh fish.

When you buy the fish, before they wrap it up for you, give it a good sniff. It should not smell fishy, especially salmon. This means that the fish oils have started to break down and the flavor of the fish is going to be...off.

If you're in a caostal city, don't be afraid to go to the fish market if you live near one. nothing is fresher than something that has just been pulled out of the water earlier that day and gutter moments before you buy it. YUMMY!

Most people don't know this but if you don't immediately freeze fish then its gonna have a bad smell... also if you defrost it more than once... its gonna have a bad smell.

Also... lemon is always good... either pour some lemon juice on the fish or cover it with slices of lemon.

Jesus, you need to throw that fish in the trash, and go buy some fresh fish. It shouldn't have any "Fishy" smell at all to it. should smell extremely fresh, like the water it came from.

There are a number of things you can do. One is to place your piece of fish on a paper towel and roll it up then unroll it. The blood and bacteria that causes the smell will be on the paper towel and the fish should smell alot better. Another method is to soak the fish in lemon juice and a lil salt for about 5 minutes or so. This should not alter the flavor of the fish. You can also pour a type of alcohol on it and rub it good with a lil garlic and salt. I usually use sake. after rubbing it with the sake, garlic and salt let sit for about 5-10 minutes. You can substitute the garlic for ginger instead if you prefer. Or you can just pour the alcohol by itself. Its up to you. I like to use a lil salt and garlic. the salt helps to remove the slimy coat that some fish have. If your fish still smells bad, then you probably just have a bad fish. You can either carefully slice off the outsides of the fish, just a thin layer to save the fish on the inside. Fish normalyy spoil from the outside in. So by cutting away the outside, u can still make use of the fish on the inside. Or be safe and just throw the damn thing away and buy new fish.
When you buy fish from the market and get home, immediately wrap the fish in a double layer paper towel tightly and then wrap with plastic wrap tightly. This will help your fish to stay fresher longer. Hope this helps.

If your fish is fresh, it shouldn't smell. Odd enough, if it smells like fish, it's old. When you buy fish, make sure you cook it the day its bought to ensure freshness. Ask your fish monger to let you smell the fish before you buy and don't be afraid to ask him/her when the fish was caught and delivered to the store. Any fishy smell, don't buy.

Good fish should not smell "fishy." That is a sign of decomposition. I live 1/4 mile from the coast in Florida. I cook and eat fresh fish all the time and never notice an aroma.

When I travel, I will not purchase fish if I can smell it. When you buy your fish, smell it first. If you notice a strong aroma, RUN, do not walk. If you notice a slight aroma, it's O.K., just cook it immediately.

By the way, all citrus fruits, not just lemons, go well with fish. Save the rinds. Any waste fish goes in the sink's "dispose-all," first. Then dump the citrus rinds in there to clean it out.
