Try cutting back by about 1/2 cup of the macaroni before you cook it. I wanted to do the same thing as you and this is now what I do. If you add bread crumbs to the top, reduce this a bit too.
This is the perfect recipe for mac & cheese
2 tbs butter
2 tbs flour
1 tbs of Dijon mustard
2 cup milk
2 cup shred sharp cheddar cheese
2 cups cooked elbow mac
melt butter
stir in mustard
stir in flour
add milk
add cheese one cup at a time...keep stirring
stir until thickens and cheeses melts keeps stirring
pour over mac
eat like this or place in baking dish and bake for 20 min...
totally yumbo and it freezes well
the noodles even though there cooked, continue to absorb moisture, that maybe your problem, To many noodles for the amount of moisture you've used.
after you drain the macaroni, put it back in thye pot, add the butter (cut the butter into small pieces, so that it melts faster)
Stir it until it melts, dump in the cheese, flip it through once or twice with the spoon, then add the milk, and stir well.
Much creamier than just throwing everything in at once and stirring.
Drain noodles... seperate pot mix together milk/cheese and heat, then mix all together. For it to be "cheesier", add about a cup more of cheese and 1/2 cup of milk
