Try cooking cabbage mixed with any type of greens. It's really good.

cut some cabbage put in two can of lucks beans some tomatos with a slice of bacon there you go

saute chopped cabbage till just tender with onion and garlic, salt pepper and a bit of olive oil and then add one of the following combos

basil, Parmesan, tsp of tomato paste

add chopped apples with the cabbage and onions, mix in thyme and shredded sharp cheddar after tender

add curry powder, coconut milk, raisins, orange zest and sliced almonds

add green onions, cilantro, a tsp of peanut butter, Thai chili sauce, lime zest and chopped peanuts

add saffron, green peppers, canned tomatoes

add oregano, lemon zest, flat leaf parsley, feta cheese, olives

these are all ideas for cooked cabbage - but use the same ideas and flavor profiles to create cold salads with fresh cabbage as well

Italian Sausage and Cabbage
Ingredients
2 tablespoons butter or margarine
2 tablespoons olive oil
1 pound hot or mild Italian sausages, casings removed
1 head cabbage (about 2 lb.), rinsed and thinly sliced
1/4 cup fat-skimmed chicken broth
1/2 cup minced parsley
Salt and pepper

Preparation
1. In a 5- to 6-quart pan over medium-high heat, combine butter and oil. Add sausages and break apart with a spoon; stir often until lightly browned, about 5 minutes. Add cabbage, broth, and parsley, and bring to a boil. Reduce heat, cover, and simmer, stirring occasionally, until cabbage is tender to bite, about 30 minutes.
2. Spoon sausage and cabbage mixture into bowls. Add salt and pepper to taste.

Yield
Makes 4 servings

JAPANESE CABBAGE NOODLE SALAD

1 med. cabbage, shredded (or buy mix)
1 green onion, sliced
2 pkgs. chicken flavor Ramen noodles, break up but DO NOT COOK
4 tsp. sesame seeds, toasted - keep separate
4 tbsp. sliced almonds, toasted - keep separate

Make dressing in a jar:
Combine:

1 tbsp. sesame oil
1/2 c. salad oil
4 tsp. sugar
6 tbsp. vinegar
1/4 tsp. salt
1 tsp. black pepper

Add seasonings from packets of noodles.
Assemble all ingredients when you are about to serve it. The noodles absorb the dressing and make a crunchy salad.

I like to use less cabbage and add 2 cups cooked chicken pieces. Serves 8-10.

(You could alter the salad dressing or seasonings to make it more Indian or Italian. Add a bit of chutney or Italian dressing? I'm going to try that...)

This one is a favorite at our house:

Baked Cabbage....Cajun style

Head of cabbage washed, drained and cut into 4 quarters, core removed
stick of butter or margarine (butter tastes better)
salt
pepper
Cajun seasoning (I use Louisiana brand, found in most grocery stores)
aluminum foil

Preheat oven to 350 degrees. Take one of the quarters of cabbage and place on sheet of aluminum foil. Put several pats of butter on top of cabbage (approx.1-2 tbsp.). Sprinkle with salt, pepper and Cajun seasoning. Wrap cabbage in foil with all ends of foil on top of cabbage (make like a pouch so butter and juices don't leak out). Repeat with other 3 quarters the same way. Place on cookie sheet. Bake in oven for approx 30 to 45 min. depending on size of cabbage quarter. You can check for done-ness (?) by gently squeezing foil packets, if they are tender, they are done. Remove carefully from foil packets (steam will be HOT) and enjoy!
****This is also a wonderful recipe for the barbecue grill or campfire.****
