Would like recipes using celery.?

Have garden full of celery and need recipes,hot and cold.


Answers:
You can make stuffed celery by mixing cream cheese, peanut butter and a bit of soy sauce. Or this sounds interesting...

Spicy Fried Celery

4 celery ribs, with some leaves
1 small red chili
1 1/16 tablespoons oil
4 teaspoons sugar
2 1/16 tablespoons soy sauce
< 15 mins

Cut the celery sticks into 4cm lengths, then finely shred these vertically.
Slice the chilli thinly.
Heat the oil in a fry pan, and add the celery, chilli and sugar.
Stir-fry over a moderate heat for 1 minute, then add the soy sauce and continue stir frying for a further minute or two and until all the liquid has evaporated.
To keep the celery crisp, evaporate the liquid quickly.

CREAM CELERY SOUP - WITHOUT CREAM

1 head celery, washed, trimmed of strings, and coarsely chopped (include some
leaves)
1 knob celeriac (celery root) or 2 sm. potatoes, peeled and diced
3 med. onions, peeled and diced
1 qt. chicken stock
3/4 tsp. celery salt
1/2 tsp. celery seed
Freshly ground pepper
Fresh parsley, finely chopped, for garnish

Simmer the vegetables, covered in the chicken stock in a large saucepan until tender, about 15 minutes. Drain the vegetables, reserving the cooking liquid. Puree the vegetables, adding a little liquid as needed. Stir the puree into the reserved cooking liquid and add the seasonings. Serve hot or cold. (Also freezes well).
Note: Celery root is difficult to peel but it adds a full earthy flavor. After peeling, use immediately or drop in cold water with lemon juice or vinegar to prevent it from turning brown.

Serves 6-8.

ALMOND BAKED CELERY

1 bunch celery, cut into bite - size pieces
1/2 c. chopped, toasted almonds
1/2 c. grated sharp cheddar cheese
1 tsp. salt
pepper
1/2 tsp. paprika
1 can cream of celery soup
1/2 c. bread crumbs

Cook celery in a small amount of water about 10 minutes. Drain well. Place celery in casserole; cover with almonds then cheese. Combine seasonings with soup and pour over all. Cover with bread crumbs. Bake 30 to 35 minutes at 375 degrees.
------APPLE & CELERY BREAD

2 c. apples, fresh, diced (do not peel)
1/2 c. celery, fresh, diced
3 lg. eggs
1 c. vegetable oil
1 3/4 c. sugar
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. baking powder

Beat eggs in mixing bowl. Add oil and sugar; mix well. Add apples and celery; blend. Sift together dry ingredients and add to above mixture; just to blend. Pour into a greased loaf pan and bake at 350 degrees for 1 hour.

Chicken Stuffing Casserole


Ingredients
1 box Creamy Wild Rice Soup Mix
5 cups hot water
4 stalks chopped celery
2 tsp. Garlic Garlic?
1 medium chopped onion
14 oz. pkg. stuffing crumbs
1/4 cup (1/2 stick) melted butter
4 oz. can drained mushrooms
4 cups cooked rice
2 tsp. salt
1 tsp. pepper
2 tsp. dried parsley flakes
4 boneless, skinless chicken breasts
2 jars chicken gravy

Directions
Prepare Creamy Wild Rice Soup Mix as directed on package. Add celery, Garlic Garlic? and onions; simmer 60 minutes. In a large bowl, add stuffing crumbs, butter, mushrooms, rice, salt, pepper and parsley. Mix thoroughly. When soup is done, add to crumb mixture and mix well. Spray a large pan with non-stick spray. Place stuffing mixture in bottom of dish and add chicken breasts. Top with gravy. Bake at 350° for 30 minutes or until chicken is done. Makes 6-8 servings.

veg & bacon soup

1 onion, chopped
bacon 4-5 shortcut rashers
2 cloves crushed garlic
2 carrots chopped
2 celery sticks chopped
2 x 400g tins crushed or diced tomatos
1 x 300g tin red kidney beans, rinsed
4 cups veg stock
2 cups shredded cabbage
parsley to garnish

heat a littl eolive oil in a pot, add onion & bacon, cook 5 mins or until onion is soft
add garlic, carrot & celery, cook a few more minutes
add tomato, beans & stock, bring to boil
cover and simmer on low for 15 minutes
add cabbage and simmer another 10 minutes
season with salt & pepper, add parlsey and serve

should serve 4

that's my favourite but I also use it in lentil soup, you can chop it up finely and add to stuffings, like stuffed pumpkin or capsicum...

Miracle Whip has a great receipe. I used to make it a lot.. its fantastic. I"m not sure the measurements but you can check their website.

Its called Chicken Swiss Casserole.

Cubed chicken, pulled chicken. I use 2 boiled breasts. Half cup onion-2 cups home made croutons-2 cups chopped celery- 1 cup of walnuts-1 cup of miracle whip ( not sure) and a couple cups of shredded swiss cheese.

mix everythign together but the croutons and swiss. add the croutons and cheese and toss and put in a baking pan and bake at 350 for 30 mins.

I LOVE THIS.. its really rich

you can make a:
celery salad:
cut a few celery stocks, add raisins, mandarin (Clementine pieces), a bit of mint if you feel like it.
make the dressing from: 1tsp oil, 1tsp honey, 1tsp vinegar.

celery filled with cheese and herbs, or a olive tomato tapanade, or pieces of chicken with avocado and a bit of lemon. basically any combination you feel like :-)
