Anyone have a good recipe for "Red Velvet Cake" with sour cream icing?


Answers:
I have one with cream cheese frosting below:
RED VELVET CAKE

2 1/2 c all purpose flour
1 1/2 c sugar
1 1/2 c oil
1 c buttermilk
2 eggs
1 tsp vanilla
2 tsp cocoa
1 tsp salt
1 tsp soda
1 tsp vinegar
1-2oz bottle red food coloring (or 2-1oz bottle)

Mix all ingredients together and bake at 350F for about 30 to 35 minute.

Icing:

1 Box (16oz) confectioner's sugar (sifted)
1 stick butter, softened
1 8oz package cream cheese
1 tsp vanilla
1 cup mixed nuts
sugar
butter
cream cheese
vanilla

Combine first 5 ingredients. Add remaining ingredients until icing forms peaks. Fold in the nuts and spread over the cake.

And a separate recipe for sour cream frosting:
SOUR CREAM FROSTING:

2 1/2 c. powdered sugar
1/3 c. sour cream
1/4 c. shortening

Cream together. Add:

3/4 tsp. vanilla
1/8 tsp. salt

Mix at low speed until mixture is mixed. Increase to high speed and beat for 1 minute until smooth and fluffy.

PREPARATION:
Place all dry ingredients in bowl; stir to blend. In another bowl, blend eggs with fork. Add oil and blend again. Add egg mixture to dry ingredients and mix with wire whip until smooth. Add and blend buttermilk, food coloring, and vanilla into the batter.Pour equally into three greased and floured 8-inch cake pans. Bake at 350° for 30 minutes. Cool ten minutes and remove from pans.

Sour Cream Frosting

INGREDIENTS:

1/4 cup butter
1/2 cup sour cream
1 teaspoon vanilla
1/4 teaspoon salt
2 1/2 to 2 3/4 cups sifted confectioners' sugar

PREPARATION:
Melt butter in top of double boiler over hot water. Remove from hot water; stir in sour cream, vanilla, and salt. Slowly beat in confectioners' sugar until desired spreading consistency is reached.

Mom's Homemade Red Velvet Cake Recipe
* 2 1/2 C. all-purpose flour
* 1 1/2 C. sugar
* 2 tsp. cocoa
* 1 tsp. baking soda
* 1 tsp. salt
* 2 eggs
* 1/2 C. oil
* 1 C. buttermilk
* 2 oz. (1/4 C.) red food coloring
* 1 tsp. vanilla

PREPARATION:
Place all dry ingredients in bowl. Blend eggs with fork. Add oil and blend again. Add this mixture to dry ingredients and mix with wire whip until smooth. Add and blend buttermilk. Pour equally into three greased and floured 8" cake pans.Bake at 350° for 30 minutes. Cool ten minutes and remove from pans. Frost cake when completely cooled.

Icing

Mix together until light and fluffy:

・ 1/2 stick butter
・ 8 oz. cream cheese
・ 1 lb. box of powdered sugar
・ dash of salt
・ 1/2 tsp. vanilla
・ 1 C. chopped nuts
