TROUT ALMONDINE
8 to 12 trout fillets
Milk to cover
2 tsp. salt
4 drops Tabasco
1 1/2 c. flour
1 tsp. pepper
1/2 c. butter
2 tbsp. olive oil
Soak fillets in a mixture of milk and Tabasco sauce for several hours. Season flour with 1 teaspoon salt and pepper. Remove fillets from milk as needed and dip in flour, shaking off excess flour. In an electric skillet at 375 degrees, fry fillets until golden brown in the butter and oil. Do a few at a time, and as cooked place on a warm platter or cookie sheet and keep warm in the oven until ready to serve. These may be kept in a warm oven up to 3 hours.
SAUCE:
1 c. butter
1/2 c. almonds, sliced
2 tbsp. lemon juice
2 tsp. Worcestershire sauce
1 tsp. salt
1/4 c. parsley, chopped
Prepare sauce by melting butter and lightly browning almonds in butter. Add lemon juice, Worcestershire, salt and parsley. Mix and heat well. Just before serving, pour some sauce over trout and serve remaining sauce separately. If the sauce is made ahead of time, add the almonds at the last minute so they will remain crunchy.

STUFFED TROUT
Seasonings:
Pepper
garlic powder
seasoned salt
parsley
sweet basil
STUFFING:
1 box UNCLE BEN'S? long grain and wild rice mix
1/2 lb. breakfast sausage
1 med. green pepper
1 med. onion
2 plum tomatoes
1/3 lb. mushrooms
Prepare rice mix according to package directions.
In a large skillet, cook the breakfast sausage until browned through, cutting it into small pieces with spatula as sausage cooks. Remove sausage.
Dice the vegetables. Add the onion, green pepper and mushrooms to the remaining grease, cooking until onions turn clear. Drain grease, add the rice and tomatoes. Stir.
Rub the trout inside and out with the seasonings. Stuff the trout with the rice and vegetable mixture. Cook in a preheated 325 F. oven about 35-40 minutes or until trout separates easily from bone with a fork.
Serves 4.

BACON WRAPPED TROUT
3/4 c. melted butter
1 pkg. dry onion soup mix
1/4 tsp. pepper
3 lb. trout
1/2 lb. bacon
Combine butter, soup mix, pepper. Spread trout with mixture and wrap bacon sliced about them. Secure with toothpicks. Cook 10 minutes per side or until meat flakes easily.
The first thing you'll need is a stringer full of beauties...good luck.
Trout is hard to cook on a fire. I bring one of those metal baskets with a handle. Salt & Pepper, chunks of onion, whole mushrooms, packed in with the fillets.
Baked Trout Saratoga:
INGREDIENTS
1 (4 pound) whole trout, cleaned
salt and pepper to taste
1 (28 ounce) can diced tomatoes
2 tablespoons olive oil
2 tablespoons chopped fresh parsley
1 clove garlic, minced
1/2 cup white wine
1 lemon, cut into wedges
4 sprigs fresh parsley
DIRECTIONS
Preheat oven to 400 degrees F (205 degrees C). Lightly oil a 9x13 inch baking dish. Season the trout inside and out with salt and pepper to taste, and place in baking dish.
In a large bowl, combine tomatoes, olive oil, 2 tablespoons chopped parsley, and minced garlic. Spread evenly over the fish.
Bake for 35 minutes, or until fish flakes easily. Baste during baking with wine. Serve garnished with lemon wedges and parsley sprigs.
Trout is best to keep super simple.
Fillet the fish leaving the skin on.
Heat frying pan and Butter and Olive oil together so that the butter doesn't burn.
Put fish in pan skin down.
Season the trout with salt and pepper.
finish with lemon juice.
Sound too simple I know but its good and you don't need a lot of items for your camping trip.
The best way to cook trout over a grill or fire is to first marinade the fish for about 30 minutes in white wine, and Worcestershire sauce. Next take the marinaded fish and wrap it in foil and place on grill or over fire and let cook until until tender and white. Bonn Appetite!!!!

Trout Jerky
Ingredients
1/4 cup soy sauce
1 teaspoon olive oil
1 teaspoon minced garlic
1/2 teaspoon freshly ground black pepper
1 pound trout strips
Instructions
Mix all ingredients together with the exception of strips. Allow the ingredients at least 15 minutes for flavors to blend. Add strips. Marinate at least one hour. For longer marinating time, place in the refrigerator in a covered container or in an airtight plastic bag. Remove from marinade and place in a drying environment.
As the oil beaded up during the drying process, pat it off. I turned the fish strips over once during the drying process.

Camp Out Trout
INGREDIENTS:
4 whole trout, cleaned
4 strips of bacon
4 sprigs of fresh thyme
1 lemon
salt and pepper to taste
PREPARATION:
Oil and preheat grill. Slightly cook the bacon in a frying pan, so that it's started to be cooked but still pliable. Rinse out the trout and pat dry with a paper towel. Place a sprig of thyme inside each fish. Wrap each trout with a strip of bacon and secure with a toothpick. Place trout on grill or in an oiled grill basket. Grill 5-7 minutes per side depending on the size of the trout. When the meat turns opaque in the center and easily flakes then the fish are done. Discard bacon and pour a little fresh lemon juice over each fish. Serve.

Chili Pepper Smoked Trout
INGREDIENTS:
4 medium size trout, cleaned
8 green chili peppers, cut open with the seeds removed
1 lemon cut into thin slices, peel on
4 cloves garlic, cut into four pieces each
ground black pepper
PREPARATION:
Prepare smoker for a 3 hour smoke. Wash fish and remove all bones. Open and place inside 2 chilies, 2 slices of lemon and 1 clove of garlic. Place in smoker for 3 hours. When it's finished remove the stuffing and serve.
Alright the best way to cook most fish besides frying. Is you take foil and drizzle it with olive oil. Add the fish to the foil and put a little more olive oil on that. Add some potatos and some onions salt and pepper and close the pocket tightly and throw it on and grill. Wait for it to finish you may have to check it to see when it is cooked. When it is done open it and eat it. This is good because the fish is moist also you can let people put there own ingridents into the pocket. I always do this when i camp it is so simple
P.S.: You can add other things to the pocket beside potatos and onions such as corn and other veggies

Okay not a camping recipe...but a romantic one. Let's assume it's just you and one other person, take a dressed trout or two and season the inside with salt and pepper, add about 1/2 TBS of butter and spread it inside the fish. Stuff fish with about 1/4 oz of edible (organic) roses season outside with salt and pepper, and sear on both sides in a hot skillet about 1 1/2 minutes per side. Finish in a 350 Deg. F oven for about 5-7 minutes. Chiffonade (lay some rose petals on top of one another and roll up like a cigarette, cut the roll very fine, you should get shreds of rose petal) some roses and sprinkle on top and drizzle trout with some Extra Virgin Olive Oil.
Clean your trout and leave the head on.Fill the cavity with pace brand salsa and wrap in alluminum foil then bake for 15 minutes. mmmm mmm good! or try this one!
Rock Fried Fresh Fish

1 fresh caught, cleaned fish, head on
1 Willow branch, bark removed, or bamboo skewers soaked in water
1 flat rock, not shale, sandstone, slate or wet rock from water
(these rocks can explode when heated)
Seasonings to taste that you like on fish, or salt and pepper
Build a fire then place a flat rock on the edge of the fire pit, and pre heat the rock. Cut Willow branch or wet bamboo into3” pieces with a point on both ends. Place the sticks into the belly area of the fish to hold the cavity open. Sprinkle the interior of the cavity with seasoning or salt and pepper.
Place fish on the rock with the cavity facing the fire. Turn
fish over onto other side to cook on rock. Continue cooking and turning until fishes head falls off the body. Enjoy!
