Banana bread?
I am making banana bread and was curious what is the best way to mash up my bananas? Can I use the blender? Help!!

A fork will do a good job!!
I usually just use a potato masher and it does the trick. I guess you could do it in a blender, but that would make it more like a liquid, but if you will eat it like that go for it!!

I have used the blender and a food processor. Use whatever works. In one instance I used a fork and mashed it in a bowl. That was the best banana bread.
Chocolate Chip Banana Bread:
2 loaves
3 ripe bananas (mashed)
2 cups flour
1 cup sugar
1 teaspoon baking powder
2 eggs
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup shortening
1/2 cup nuts
vanilla chocolate chips
1. Preheat oven to 350 deg F.
2. Mix all ingredients together except nuts and chips in a mixer.
3. Stir in nuts and chips.
4. Grease loaf pans.
5. Pour mixture in pans.
6. Bake for about 1 hour.
7. Test with a tooth pick to see if done.
8. Will come out clean unless a chip is hit when done.
9. Hint: If banana are getting to ripe and you do not nave the time to make the bread at this time.
10. Put the bananas in your freezer unpealed to use later.
I prefer mashing with a three-tine kitchen fork. It leaves small chunks. Once when making many loaves of banana bread with some friends, we used a potato masher in a 5 quart pot to handle all the banans at once. If you do use a blender or food processor, simply pulse it, instead of letting it whirl. You will be able to control the consistency of the bananas better.
By the way, if you come up a little short on the amount of bananas, try using sour cream to make up the balance. When I first tried this I was about 1/2 cup short of bananas for a double batch. This would have been 1 large banana worth. Adding 1/2 cup of sour cream worked just fine. Using the toothpick test for doneness, I think I ended up baking the loaves about 5 to 10 minutes longer than usual. The bread was delicious, rich, and moist.
I mash mine with a fork and it mashes the bananas enough and leaves small chunks as well which makes the banana bread moist.
Here is the recipe from Betty Crocker, but do not mash with blender. Mash by hand with a fork or potato masher that my recommendation. If you mash with blender, the taste is still there but it will not be as good.

1 1/4 cups sugar
1/2 cup butter or margarine, softened
2 eggs
1 1/2 cups mashed very ripe bananas (3 to 4 medium)
1/2 cup buttermilk
1 teaspoon vanilla
2 1/2 cups Gold Medal? all-purpose flour

1. Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350°F. Grease bottoms only of 2 loaf pans, 8 1/2x4 1/2x2 1/2 inches, or 1 loaf pan, 9x5x3 inches.
2. Mix sugar and butter in large bowl. Stir in eggs until well blended. Add bananas, buttermilk and vanilla. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts. Pour into pans.
3. Bake 8-inch loaves about 1 hour, 9-inch loaf about 1 1/4 hours, or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans and place top side up on wire rack. Cool completely, about 2 hours, before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.
Place in bowl and mush a little with a fork then add your butter or shortening for your bread and beat with a mixer. and the rest of your ingredients and put in pans and bake
