Applesauce Cinnamon Muffins
1 3/4 cups all-purpose flour
1/2 cup brown sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 egg
A little more than 1 cup applesauce
1/4 cup vegetable oil
Grease or lightly butter, twelve 2 1/2 inch muffin cups, or use paper bake cups. In a bowl, add all dry ingredients and mix together until combined. Add applesauce, and egg. Stir until moistened. Bake in a 400 degree F. oven for about 20 minutes. If using non-stick pan, decrease the temperature to 375 degree F. oven and cooking time may vary slightly.
Dairy-free Biscuits
2 cups + about 2 tablespoons (if needed) Shake and then level off with a knife.
1 tablespoon + 1/2 teaspoon baking powder
1 1/2 tablespoons sugar
1/2 teaspoon salt
1/2 cup shortening
2/3 cup rice/soy milk
Combine the dry ingredients. Using a pastry blender (or two knives), cut in shortening until it resembles coarse crumbs. Add milk. Mix until combined. Knead until the dough holds together. Roll out dough to about 1/3 to 1/2 inch thick. If needed, pat some flour on both sides of the rolled out dough. Cut with a 2 1/2 inch round biscuit (or cookie) cutter (or you can use different shapes cookie cutters). Place biscuits on a baking sheet. Bake in a 425 degree F. oven for 10 to 12 minutes or until slightly golden brown on top. Makes about 12 biscuits (depending on the size of the cookie cutter).
Dairy-free Dessert Cinnamon Biscuits
Follow the above recipe except add 3 tablespoons sugar, 1/2 teaspoon of ground cinnamon, and raisins (if desired). You can omit the cinnamon and sprinkle cinnamon sugar on top of the unbaked dough. You can drizzle some thin powdered sugar icing on the biscuits. Use different colors for specific holidays.
Pineapple Bread
3 1/4 cups all-purpose flour
3 teaspoons ground cinnamon or other spice *(You can reduce the amount of spice.)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 1/4 cups sugar
1/4 cup cooking oil
1/4 cup rice/soy, etc. milk
2 eggs
1-20 ounce can crushed pineapple
In a mixing bowl, combine all the dry ingredients. Add the remaining ingredients. Mix with an electric mixer until combined. Pour into 2-8x4x2 inch greased loaf pans. Bake in a 350 degree oven for 55 to 60 minutes or until toothpick comes out clean. Cool for 10 minutes on a wire rack. Remove bread from the pans and let cool completely. Slice, wrap, and store. Makes 2 loaves.
Quick Pretzels, Sweet Spice Pretzels, Rolls, Cinnamon Rolls, and Breadsticks (Dairy-Free & Egg-Free)
Pretzels
3 cups all-purpose flour (Shake and level flour off with a knife.)
2 1/4 teaspoons instant (quick) yeast
1/2 teaspoon salt
1 cup + 3 tablespoon water or rice/soy milk (or other milk) (You can use a mixture of the milk and water.)
4 tablespoons cooking oil
2 1/2 tablespoons sugar
In a mixing bowl, with a mixing spoon, mix together 2 cups flour, undissolved yeast, sugar, and salt. Add the warmed water and/or milk (120 to 130 degrees F.) and oil to the flour mixture. Mix until combined. Knead for about 6 to 8 minutes. Cover and let rest for about 10 minutes. Take a small ball of dough and roll into ropes/snakes. (For children, let them make them into into letters or other things. Place on a slightly greased 18x13 inch baking sheet. (You can let rise for about 30 minutes or until nearly doubled.) Bake in a preheated 375 degree F. oven for about 15 to 17 minutes or until tops are slightly brown (or they should sound hollow when tapped).
Note: If you like, you can brush some water on the pretzel dough and sprinkle some course salt on them.
Honey Pretzels
Follow the above recipe. Omit the sugar. Use 2 tablespoons less of milk or water. Place about 2 tablespoons of honey in with the milk and/or water (when you heat it up).
Sweet Spice Pretzels & Spice Raisin Pretzels
Use the pretzel recipe except add 1 teaspoon of ground cinnamon, nutmeg, allspice, etc. to the dry ingredients and use 1/3 cup sugar. Bake in a 375 degree F. oven for about 15-17 minutes or until the bottoms are slightly brown (or they feel hollow). Add some raisins to the dough if you like.
Spice Twists
Use the above directions except braid three short ropes/snakes. Pinch the ends together to make them stay together. If you like, spread thin powdered sugar icing on the twists.
Rolls and Breadsticks
Follow the above recipe. Shape into rolls or breadsticks. Place on a slightly greased 18x13 inch baking sheet. Cover and let rise for about 30 minutes. Bake in a 375 degree F. oven for about 15-17 minutes or until the bottoms are slightly brown.
Cinnamon / Spice Rolls
In a mixing bowl, mix together 2 cups flour, undissolved yeast, sugar, and salt. Add the warmed water and/or milk (120 to 130 degrees F.) and oil to the flour mixture. Mix with a spoon until combined. Add 1 more cup of flour. Mix until combined. Knead for about 6 to 8 minutes. Divide dough in half. Let rest for 10 minutes. Nutritious and delicious! A really good and healthy recipe is if you take two celery stalks and fill them with peanut butter, and then before you assemble (Or stick) them together, fill them with M&M's, raisins, or bits of a chopped up granola bar. (My favorite) Or you could think of somethng else to stuff them with. You should try it, its delicious!
I do have a sort-of recipe for soup that I use once in a while. And while sometimes dairy products can be used in it, it's quite possible to make it without any.
You will need a crockpot- preferably a large one.
Meat (any kind but fish), either chopped or browned and drained if it's ground
1 onion
1 green pepper (optional)
mushrooms (either fresh or in a jar, optional. If you use a small jar, go ahead and add the liquid too.)
Assorted vegetables.
pureed celery and carrots (optional)
potatoes (leftover mashed potatoes, instant mashed potatoes with garlic, or a couple of potatoes washed and diced)
1 can tomatoes, including liquid
1 can tomato sauce, rinse the can out and add the water
Salt and pepper, more garlic, 1 bay leaf, oregano, thyme, and sage to taste
If you want something with a bit of spice, add salsa.
Fill the remaining space in the crock pot with water until it's about an inch below the rim, then let simmer on low during the day. When you come home, dinner will be ready. This is also a great way to use leftovers!
HONEY MUSTARD CHICKEN DRUMETTES
Bake: 400 degrees Fahrenheit
Cook: 45 minutes
Makes 24
Ingredients:
1/3 cup vegetable oil
? cup honey
? cup soy sauce
? cup Dijon mustard
? cup lemon juice
4 cloves garlic, crushed
24 chicken drumettes
Methods:
1. To make the marinade, place the oil, honey, soy sauce, mustard, lemon juice, and garlic in a large, nonmetallic dish and mix together thoroughly.
2. Trim the chicken of excess fat, then place in the dish with the marinade and toss until well coated. Cover and refrigerate for at least 2 hours or preferably overnight, turning 2 to 3 times
3. Preheat the oven to 400 degrees Fahrenheit. Lay the drumettes on a wire rack that has been placed over a baking sheet lined with aluminum foil. Bake, turning and brushing with the marinade 3 to 4 times, for 45 minutes or until golden brown and cooked. Serve immediately.
Notes:
Drumettes are the chicken wing with the wing tip removed.

Cook a day ahead and reheat in an oven at 315 degrees Fahrenheit for 10-12 minutes

Ingredients:
3 cups biscuit mix

1 can (4? ounces) Deviled Ham

Methods:
Mix deviled ham, lemon juice, and Worcestershire sauce. Spread on crackers.
NIPPY SHRIMP
Ingredients:
? Teaspoon Garlic
? Chili Sauce
30 small shrimp (shelled, cooked)
10 slices bacon (cut into thirds)
Methods:
Combine garlic and chili sauce. Pour over shrimp. Cover and refrigerate several hours or overnight, stirring occasionally. Fry bacon until partially cooked, but still limp. Drain. Wrap each marinated shrimp in a bacon piece. Secure with a wooden toothpick. Broil 2-3 inches from heat until bacon is crisp.
SHERRIED MEATBALLS
Makes 50 Meatballs
Ingredients:
2 pounds lean ground beef
1 cup catsup (ketchup)
1 cup cooking sherry
2 tablespoons brown sugar
Methods:
Heat oven to 350 degrees. Season ground beef (with salt and pepper) to taste and shape into 1-inch meatballs. Place meatballs in oven for 30 minutes to brown. Remove meatballs from browning pan and place into a casserole. Mix remaining three ingredients and pour over meatballs. Bake an additional 30 minutes. Serve meatballs with sauce.
MEXICAN MEATBALLS
Makes 25 Meatballs

1 pound lean ground beef
1 package taco seasoning mix

Methods:
Mix lean ground beef and taco seasoning and shape into 1-inch meatballs. Brown in skillet and place on paper towel to drain. Reheat in oven and serve with chilled salsa.
PARTY DRUMMETTES
Makes 20 Drummettes
Ingredients:
2 pounds chicken drummettes (skin removed)
? cup low sodium soy sauce
? cup wine vinegar
? teaspoon garlic powder
Methods:
Broil drummettes, 8 minutes one side, turn and broil 6 minutes on other side until browned. Combine drummettes with remaining ingredients in a shallow baking dish. Cover and bake at 350 degrees for 30 minutes or until tender.
Easy Vegan Pancake Recipe
Yes, it's true, you can make perfectly good pancakes without eggs or even milk! This vegan pancake recipe uses soy milk as a substitute and the result is perfect light and fluffy pancakes.
INGREDIENTS:
* 1 cup flour
* 1 tbsp sugar
* 2 tbsp baking powder
* 1/8 tsp salt
* 1 cup soy milk
* 2 tbsp vegetable oil
PREPARATION:

INGREDIENTS
* 1 cup dates, pitted and chopped
* 1 cup dark brown sugar
* 1/4 cup margarine
* 1 cup boiling water
* 1 3/4 cups self-rising flour
* 1 teaspoon baking soda
* 2 teaspoons vanilla extract
DIRECTIONS
1. Preheat oven to 400 degrees F (200 degrees C). Grease and flour a 9x5 inch loaf pan.
2. In a large bowl, combine dates, brown sugar, margarine and boiling water. Let stand 15 minutes. Stir in flour, soda and vanilla. Pour batter into prepared pan.
3. Bake in the preheated oven for 45 minutes. Allow to cool.

Incredible Peanut Butter Cookies:
1 cup peanut butter (we prefer chunky)
1 cup sugar
1 egg
Blend all together. Form into walnut-sized balls. Place on cookie sheet and press down with a fork which has been dipped in sugar or flour. Bake 12 minutes at 350.
Grilled Pineapple with Vodka and Cracked Black Pepper

Level of difficulty: Easy
Preparation Time: 15 minutes
Cooking Time: 10 minutes
Ingredients
1 large ripe pineapple (refrigerated for one hour before grilling)
6 tbsp vodka (flavour of your choice)
? tsp cracked black pepper
1. Cut off the top and bottom of the pineapple and place on a chopping board, flat bottom downwards. Using a large serrated-edged knife cut off the skin in long thin strips, from top to bottom, and work round the pineapple until all the skin is removed. The flesh will be studded with eyes of deeply imbedded skin. Cut these out with the point of a sharp kitchen knife. Slice the pineapple into quarters through the hard central core and then slice out the core.
2. Transfer the quarters to a plate and splash over the vodka. Sprinkle over the pepper then cover and refrigerate for an hour.
3. Grill the pineapple quarters for 4-5 minutes on each side until charring and caramelised. Transfer the grilled pineapple to a chopping board and slice into three chunks.
4. Skewer each piece with a bamboo skewer and serve warm.
Avocado, grapefruit and cheese
1 medium grapefruit
2 large, ripe avocados
2 large handfuls of kalamata black olives (any black)
4oz/120g of mozzarella or feta cheese
several radiccio/lettuce leaves
- Peel the grapefruit, divide and remove membrane.
- Thinly slice avocado lengthways.
- Chop cheese into small pieces.
- Mix grapefruit, avocado, olives and cheese.
- Serve on a bed of lettuce.
- Add any dressing. I recommend balsamic vinegar.
- (Eat before the avocado discolours).

Pea and ham soup is a famous English farmhouse dish that dates back to the middle Ages. Water is the only liquid added, as the ham makes its own stock while cooking. The meat may be soaked overnight in cold water and a little milk to help draw out the salt. Substitute celery for the celeriac if you wish.
Serves 8
Prep: 20 min / Cook: 2-2? hours
INGREDIENTS:
1 smoked ham knuckle
1lb (450g) yellow or green split peas
1 medium onion
1 large carrot
8oz (225g) celeriac
Few sprigs fresh thyme
1 bay leaf
Freshly ground black pepper
WASH the split peas thoroughly in a sieve or colander to remove any dust and grit. Finely chop the onion, and finely dice the carrot and celeriac.
DRAIN the ham, if soaked, and place in a large saucepan with 3 pints (1.7litres) of water and all the ingredients except the pepper. Bring to the boil, reduce the heat, then cover and simmer for about 2 hours. Stir frequently and add extra water if necessary. Alternatively, cook the ham for 1 hour in a pressure cooker.
STICK a skewer into the ham to check if it is tender. Cook for a further 30 minutes if required. Remove the ham from the saucepan. Allow the soup to cool and the fat to rise to the surface. Discard the fat.
IF you are adding the ham back to the soup, discard all the fat and bones and chop the meat finely, or shred by sticking a fork in the ham and tearing it with another fork. Season with pepper to taste, reheat gently and serve.

Many chefs in California delight in creating imaginative dishes by combining unusual ingredients. This eye-catching salad is easy to prepare, and can be served as a light starter or side salad.
Serves 4
Prep: 20 min / Cook: 5 min / Oven: Preheat to 200 deg C (400 deg F, gas mark 6)
INGREDIENTS:
2oz (50g) shelled whole fresh almonds
8oz (225g) fresh young spinach
1lb (450g) ripe strawberries
1 bulb fennel
DRESSING
Juice of ? orange
1 tsp smooth French mustard
2 tbsp virgin olive oil
1 tbsp fruit vinegar or white wine vinegar
Salt and freshly ground black pepper
ROAST the almonds on a baking tray in the oven for about 7 minutes, shaking the tray and checking frequently to avoid burning. When they are well roasted, tip them into a heat-proof bowl.
WASH the spinach thoroughly and pat dry. Discard any coarse leaves, or stems. Wash, hull and halve the strawberries. Wash the fennel. Remove the feathery tops and hard base, and cut into thin strips.
TO make the dressing, put all the ingredients in a screw-top jar and shake vigorously, then taste and adjust the seasoning.
PUT the salad into a large bowl, pour over the dressing and toss thoroughly. Try to leave plenty of strawberries on top of the salad when serving.
Couscous......
Is the name given to both the national dish of Morocco, and the durum wheat pasta granules
From which it is made. The granules are placed in a colander or steamer that is lined with cheesecloth or a clean tea towel and steamed over a saucepan containing a broth. As the broth is heated, steam starts to rise and cooks the couscous. Slowly the couscous absorbs the delicious flavors of the vegetables, meat and spices. The couscous is dried and separated several times to give a light, moist texture. This is not as complicated as it sounds, but it is possible to buy precooked couscous.
~~~~~ Couscous with Seven Vegetables ~~~~~
Serves 4-6
450g couscous
700-900g lamb shoulder or neck
2 cloves garlic
2 medium onions
2 tbsp virgin olive oil
2 tbsp butter
2 cinnamon sticks
2 tsp coarse salt
2 tsp freshly ground black pepper
1 chilli pepper
1/2 tsp saffron
1/2 tsp turmeric or paprika
10 sprigs parsley
10 sprigs coriander
4 carrots
3 small turnips
3 courgettes
1 aubergine
3 tomatoes
575g can chickpeas
Place the couscous in a bowl and cover with cold water. Drain immediately through a fine sieve and return to the bowl. Work the couscous with your fingers to separate the granules. Leave to stand.
Meanwhile, dice the lamb into 2in (50mm) cubes, finely chop the garlic and slice the onions into rings. Prepare the broth by putting the lamb, garlic, onions, oil, butter, cinnamon stick, salt, pepper, chilli pepper, saffron, turmeric or paprika, 6 sprigs of parsley, 6 sprigs of coriander, and 3 pints (1.7 liters) of water into a large pan. Bring to the boil.
Work the couscous between your fingers again and place 8 tbsp of it into the lined colander, over the gently simmering broth. When steam rises through, add the rest and steam for 30 minutes.
To prepare the vegetables, peel and quarter the carrots and turnips. Trim and quarter the courgettes and slice the aubergine. Quarter and seed the tomatoes. Drain and rinse the chickpeas.
Remove the colander and empty the steamed couscous into a large flat pan. Sprinkle with a small glass of salted water. Separate the grains with your fingers spread the couscous out and leave to dry.
Meanwhile, add the carrots and turnips to the broth and steam for 10 minutes. Then stir in the aubergines courgettes and tomatoes, and just enough water to cover all the vegetables, if there is insufficient. Return the couscous to the colander and steam for 20 minutes. Add the chickpeas to the broth and steam for a final 10 minutes.
Reserving the broth liquid, drain the vegetables and meat. Heap the couscous onto a large, warmed serving plate and moisten with 1/4 pint (150ml) of the broth and make a hollow in the middle. Spoon the meat and vegetables into the hollow. Chop the remaining herbs for garnish and serve.

How about "The Duchess of Windsor" salad? Peeled avocado half filled with jellied consomme and a dab of sour cream ... topped with black caviar on a bed of butter type lettuce. Really tasty. Served many times at formal sit down dinners.
Bruchetta! I have a very easy recipe that I came up with on my own. You will need:
-French Baguette
-Fresh Roma Tomatoes (I use about 1-1.25 lbs. per loaf)
-Newmans Light Basalmic Vinaigrette Dressing (1/2 bottle per 1-1.25 lbs. of tomatoes)
-Basil (I don't even use fresh basil)
-Butter (substitute with olive oil)
-Garlic Powder
1. To make the bread for the Bruchetta, slice the baguettes.
2. Melt butter in microwave with a little bit of garlic powder and spread on the bread slices.
3. Bake on cookie sheet until golden brown. ( I usually set oven to 375 or so)
4. Cut up Roma tomatoes.
5. Mix in bowl with Newmans Basalmic Vinaigrette dressing and add some basil. (I usually refrigerate for a minimum of 30 minutes, I have even kept it overnight and it is fine.)
6. You can serve on a platter with the tomato mixture separate from the bread so that the bread doesn't get soggy, or you can scoop the tomato mixture on the breadh ahead of time.
You can substitute the butter for Olive Oil. Also, I'm sure the french baguette contains eggs or other dairy products but if you go to an organic food market you can probably find a similar loaf bread that would work fine. This is a great recipe so if you can find a good loaf of bread to use I think you'll love it!

Mix together , place in 8x8 pan refrige until set .

Mini Tacos
24 mini tacos 15 min 5 min prep
24 wonton wrappers
1 lb hamburger
1 package taco seasoning
1/2 cup salsa or picante sauce
3 tablespoons salsa
1 cup shredded cheese (cheddar is good, but a mexican blend would be good too)
sour cream (optional)
olives (optional)
guacamole (optional)
Cook hambuger until browned.
Drain the fat and stir in taco mix and 1/2 cup salsa/picante sauce.
Simmer for 3-5 minutes.
Press wonton wrappers into mini muffin cups.
Spoon beef mixture in cups and top with the 3 tbls of salsa and cheese, evenly divided.
Bake in preheated 425F oven for 8 minutes, or until the wontons are nicely browned.
Serve with extra salsa, sour cream, olives and Guacamole if desired.
