DELICIOUS NO BAKE CAKE

1 c. soft butter
2 1/2 c. sifted confectioners' sugar
4 eggs, separated
1 (8 oz.) can crushed pineapple, well drained
1 sq. unsweetened chocolate, melted
1 tsp. vanilla extract
18 ladyfingers, split lengthwise
1/2 sq. unsweetened chocolate, shaved
1/2 c. heavy cream, whipped

Day Before: Mix butter and sugar on medium speed until fluffy. Beat in yolks; one at a time. Beat whites until stiff, fold into butter mixture. Divide mixture into 3 equal parts. To one part, add pineapple, to second, add chocolate and to third add vanilla. Line bottom of 10x6x2 inch baking dish with 1/3 of the ladyfingers. Pour on pineapple filling. Cover with another 1/3 of ladyfingers, then spread chocolate filling on. Top with rest of ladyfingers. Spread on vanilla filling. Refrigerate 24 hours.
About 30 minutes before serving, sprinkle cake with shaved chocolate. Then cut into 12 squares, wiping knife after each cut. If desired, top each square with a generous dollop of whipped cream. 12 regular servings, 6 pig-out servings.

Frozen raspberries or strawberries (drained) could be substituted for the pineapple.

1/2 devil's food cake mix
1 (8 ounce) container sour cream
2 eggs
1 cup semi-sweet chocolate chips or cherry chips or peanut butter chips, etc

Combine all ingredients in a batter bowl.
Pour into a small microwave safe baking dish such as the Pampered Chef mini baker.
Cover baker with a plate.
"Bake" on high in the microwave for 13 minutes.
Let stand for 5 minutes (do not remove the plate), then invert on to plate.

2 cups bisquick
1 cup milk
1 egg

My family has made this refrigerator cake for ages, which should still be on the Nabisco packaging:

Take a box of Nabisco Famous Chocolate Wafer cookies.

In a large bowl or pitcher, put about a cup of heavy cream, a tablespoon of sugar, and a teaspoon of vanilla or almond flavoring. Beat this until it becomes whipped cream. (Be careful not to beat it too long, or you'll have butter instead.)

Divide the cookies into two piles. Take a cookie, slather it with whipped cream, and put it aside. Take another cookie, do the same, and stack it on top of the first cookie. Do this until you have two stacks of cookies held together with whipped cream.

Put the two stacks of cookies on a plate, side by side so that they form a rectangle, and cover with the rest of the whipped cream so that you can no longer see the cookies. Refrigerate overnight at least.

When you serve it, slice it at an angle so that the slices are striped. (It will slice easily, because the cookies absorb some of the butterfat from the cream and soften.)

Dirt Cake

INGREDIENTS

* 1/2 cup butter, softened
* 1 (8 ounce) package cream cheese, softened
* 1/2 cup confectioners' sugar
* 2 (3.5 ounce) packages instant vanilla pudding mix
* 3 1/2 cups milk
* 1 (12 ounce) container frozen whipped topping, thawed
* 32 ounces chocolate sandwich cookies with creme filling

DIRECTIONS

1. Chop cookies very fine in food processor. The white cream will disappear.
2. Mix butter, cream cheese, and sugar in bowl.
3. In a large bowl mix milk, pudding and whipped topping together.
4. Combine pudding mixture and cream mixture together.
5. Layer in flower pot, starting with cookies then cream mixture. Repeat layers.
6. Chill until ready to serve.
7. Add artificial flower and trowel. Enjoy!
