EGGLESS CHOCOLATE CAKE
3 c. all purpose flour, less 3 tbsp.
2 c. sugar
2 tsp. soda
1 tsp. salt
1/2 c. cocoa
2 c. cold coffee
1 c. vegetable or corn oil
2 tbsp. vinegar
1 tbsp. vanilla
Sift together flour, sugar, soda, salt, and cocoa. Add coffee, oil, vinegar, and vanilla and beat until smooth using an electric mixer. Bake in greased and floured 9 x 13 pan at 350 degrees for 40 minutes or until tests done. As soon as cake is out of oven, cover it with the following icing.
CHOCOLATE ICING:
1/3 c. soft butter
3 c. sifted powdered sugar
3 squares unsweetened chocolate, melted
3 tbsp. cream or evaporated milk, or plain milk
1 1/2 tsp. vanilla
Mix butter and sifted powdered sugar until smooth. Stir in melted chocolate cream or milk and vanilla, adding a bit more milk if necessary.
You could substitute cocoa for chocolate if needed.
EGGLESS ICE CREAM
1 1/2 c. granulated sugar
1 can Eagle Brand milk
4 tsp. vanilla extract
1 lg. can evaporated milk
1/2 gal. milk
In a large mixing bowl, combine all ingredients. Mix well. To dissolve sugar quickly, put in microwave for about 1 minute. Ready to freeze.

1 c. currants or raisins
1/2 tsp. mixed spices
1/3 tsp. salt
Beat butter and sugar until light and creamy. Add milk, fruit and lastly, the flour, salt and baking powder and spices which have been sifted together, turn into greased pan and bake in slow oven about 1 hour.
Plain Eggless Cake
INGREDIENTS
* 2 1/2 cups all-purpose flour
* 2 teaspoons baking powder
* 1 teaspoon baking soda
* 1 (14 ounce) can sweetened condensed milk
* 1 cup orange juice
* 2 teaspoons vanilla extract
* 1 cup melted butter
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
2. Sift together the flour, baking powder and baking soda into a large bowl. In a large bowl, mix together the flour, baking powder, baking soda. Make a well in the center and pour in the sweetened condensed milk, orange juice, vanilla and melted butter. Mix well and pour into prepared pan.
3. Bake in the preheated oven for 30 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Five Minute Ice Cream
INGREDIENTS
* 1 (10 ounce) package frozen sliced strawberries
* 1/2 cup sugar
* 2/3 cup heavy cream
DIRECTIONS
1. Combine the frozen strawberries and sugar in a food processor or blender. Process until the fruit is roughly chopped. With the processor running, slowly pour in the heavy cream until fully incorporated. Serve immediately, or freeze for up to one week.

first, I like the cake with raisins given above, but he forgot to include the flour measure ... you could use two cups of flour ....but there is another version, which is just as old as his (and his is an old wonderful recipe!) has a neat procedure, as follows
Boiled Raisin Cake
*********************** you pour boiling water over the raisins just to cover them and soak them until they are soft (1/2 hour, say) then drain the water off into a measuring cup and use that water as part of the liquid ...so if you get, say 1/3 cup of raisin water, add 2/3 cup of milk to make up the cup required
the rest of the recipe is exactly as he gives it ....to use the raisin water gives a delicious taste.... it is a great cake, we had it when we were children, I must get to it again .... it is fantastic unfrosted, which makes it great for lunch boxes and picnics since you don't get frosting all over everything

I know of two different kinds of ice cream ... one is French Ice Cream which is made with an egg custard which is then flavored and mixed with cream and frozen .....
and the other is called Philadelphia Ice Cream.....after The Philadelphia Ice Cream Company in Philadelphia, Pennsylvania, USA .... it is made with cream, flavored, sweetened and frozen
Philadelphia Vanilla

1 quart of light cream (4 cups)
3/4 cup of sugar
1 1/2 tablespoons of pure vanilla extract
** if you have only heavy cream where you are located, use 3 cups of heavy cream and 1 cup of milk which has more water content and will allow the cream to freeze properly
** mix the sugar into about 1 1/2 cups of cream and mix the dissolve the sugar ..then mix in the rest of the cream and the vanilla extract and stir to blend it completely .....
put this mixture into a bowl and cover it with a couple of layers of cling film and secure it so that no air enters ... maybe put a plate on top of it .... or put it into a non-reactive saucepan with a lid ... cover with clingfilm, put on the lid .......either way, put the mixture into the refrigerator to chill thoroughly then freeze it in an ice cream maker or ... pour some of the mixture into a flat tray (an ice cube tray without the dividers is fine), cover it, put it into the freezer and stir it up every half hour to get the crystals stirred evenly in the mix....keep doing this until the entire mass is all slushy and somewhat firm. (3 hours in all, maybe ... it depends upon your fridge and the weather outside!!) .. then repack it into an airtight container and put into the freezer to store it.....
*** if you make the entire recipe (in other words all four cups of cream, etc)
you will need to do this in a couple of batches ... unless you can use two of the ice cube trays at once, and do them both at once .... it depends upon what else is in your freezer ...
** you can omit the vanilla extract and put as part of the mixture some very strong coffee which has been brewed with 1/2 tsp of ground cardamom pods ... that is really good!!!... a cardamom coffee ice cream!!!

Fannie Farmer Cookbook .... and go to the chapter on ice creams and ices...I just found something wonderful called Coupe Sicilienne which has a beautiful fruit salad to be spooned into champagne glasses then topped with Strawberry Ice ...
(it calls for maraschino ... which is a syrup made from cherries, often used for drinks at the bar ...... but I am sure you could also make up a syrup of pomegranate just as well ... it would be beautiful) ...see the book online, it has a passel of wonderful recipes...
