Silken tofu blended with liquid ingredients in a recipe works well. If it's a sweet dish you can use mashed bananas or applesauce.

EGGBEATERS

Here are a few different ones, some options won't offer the leavening power of an egg:

Flax-seed substitute, combine 1 tablespoon of milled flax seed with 1/4 of water for each egg white you need. (I have heard people strain the mixture to remove the flax particles)

1 tablespoon of flour + 1 tablespoon of water = 1 egg

2 tbsp corn starch = 1 egg

2 tbsp arrowroot flour = 1 egg

1 heaping tbsp soy powder + 2 tbsp water = 1 egg

1/4 cup of any kind of tofu blended with the liquid ingredients in the recipe. Light or reduced-fat tofu cuts down on the fat and calories in the finished product.

1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.

1 banana = 1 egg in cakes.

1/4 cup of applesauce, canned pumpkin or squash, or pureed prunes. If you use these foods, know that, depending on the recipe, they may add a hint of flavor. If you want to give the food a lighter texture, add an extra 1/2 teaspoon of baking powder

ps.
If you choose to go with the flax option, use golden flax because the dark is more acidic and bitter
