What's the difference between folding and mixing in baking?


Answers:
When mixing ingredients, you can use a spoon or a mixer and basically just stir things together. If you are folding, you use a spoon or spatula, and gently scoop up from the bottom of the bowl with a scoop of batter and gently mix together. The object is to be careful not to deflate the volume of the mix. So, you basically keep coming up from the bottom and gently combining over the top.

Mixing is as the word indicates- stirring ingredients together
Folding in is when you have to enclose a lighter ingredient into a heavier mix without losing the air ie beaten egg whites into a egg yolk & sugar for a mousse
To make this easier you can 'mix' some of the egg white into your bowl to 'loosen' the mix then add the rest of egg white using a metal spoon turn & cut the egg white into it - very gently- this is known as folding

folding is to keep in the air in the mixture,while combining ingredients.this can be done by turning the spoon i a figure of 8 motion through the mixture.mixing is well,just mixing
