This is a traditional Scottish recipe for Potato scone, also called Farls in Ireland,

Ingredients:
Half pound boiled and mashed potatoes
2.5ounces flour
3 tablespoons melted butter
Half teaspoon salt

Directions:

1. Add the mashed potatoes, butter and salt to the flour.

2. Add in enough flour to make it a pliable dough but without making it too dry.

3. Turn out onto a floured surface and roll until about quarter of an inch thick.

4. Cut into six inch circles and then into quarters.

5. Prick all over with a fork and cook in a heavy pan which has been lightly greased.

6. Cook each side for about three minutes or until golden brown.

Season with salt and serve right away.

**potato cakes are widely made in Ireland and come in a variety of formas, but they're all at their best if made with freshly cooked potatoes, preferably while still warm. Serve straight from the oven, split open and buttered while hot.**

Makes about 12

225 g/2 cups self-raising flour
2.5 ml/ 1/2 tsp baking powder
50 g/ 2 oz/ 1/4 cup butter, diced
a pinch of salt
175 g/ 6 oz freshly cooked mashed potato
15 ml/ 1 tbsp chopped fresh chives
200 ml/ 7 fl oz / scant 1 cup buttermilk

1. Preheat oven to 220 celcius/ 425 farenheit/ gas 7 and lightly grease a baking tray with butter
2. Sift flour and baking powder into a bowl and rub in the butter. Season with salt. Add the mashed potato and chives. Mix well, and then incorporate enough buttermilk to make a soft dough. Turn on to a floured work surface, knead lightly into shape then quickly roll out.
3. Cut into squares with a floured knife or stamp into rounds with a 5 cm/ 2 in cutter.
4. Place on baking tray and bake in the preheated oven for about 20 minutes, or until well risen, golden brown and crisp.

Potato Scones
2 cups mashed potatoes
1 teaspoon salt
2 tablespoons melted butter
1 egg
1 teaspoon baking powder
1 cup unbleached flour, plus a little more

1. Wash peel, and boil the potatos-- about three medium ones.
2. Mash them, and measure out two cups.
3. If you are using leftover mashed potatoes, adjust the butter and salt downwards according to how much they already have in them.
4. Stir in the salt and the butter, then beat in the egg.
5. Stir in the flour and the baking powder; mix well. Add a little more flour if needed to make a soft but workable dough.
6. Divide the dough into 8 equal parts.
7. Roll out each section of the dough to about 1/4" thickness on a floured board.
8. Bake them on a lightly greased griddle or skillet at the same temperature that you would cook pancakes, for about 5 minutes each side.
9. They should feel dry but pliable, and have some light brown blisters.
10. Keep them warm in a damp towel in the oven as they are cooked.
11. Serve hot.
12. If you are cooking them all at once, you probably want to use two skillets; leftovers can be reheated in the microwave.
13. Otherwise, they can be kept raw in the fridge between sheets of waxed paper in a plastic bag.
