Potato Scones

Ingredients:

* 2 cups warm mashed potatoes
* 3 tablespoons melted butter or bacon fat
* 2/3 cup flour
* 1/2 teaspoon salt
* Butter, honey or pancake syrup

Blend the potatoes with the butter or bacon fat in a mixing bowl. Stir in as much of the flour as the potatoes will take without becoming too dry. Turn out on a floured surface; roll to 1/4-inch thickness. Cut into circles; prick tops with a fork.

Heat a greased cast-iron griddle or skillet over medium-high heat. Cook scones until brown on one side, about 5 minutes. Turn; cook to brown other side, 5 minutes. Serve warm with butter, honey or syrup.

well i know potato bread so i can tell you that ....mash your potato's say eight large old spuds but mash them dry don't put any milk in it or cream or butter just dry ...then put some plain flour on your bench top ..when the spud is cool enough ...put it on the flour and flatten out to an inch thick sprink more plain flour on top ....then cut with your scone cutter ....cook in a dry frying pan or gridddle just cook with a little plain flour in your pan no oils ok .. cook about ten minutes each side...then top with real butter ...we eat this with bacon and eggs best to eat it freshly cooked ....

Stir in the salt and the butter, then beat in the egg. Stir in the flour and the baking powder; mix well. Add a little more flour if needed to make a soft but workable dough. Divide the dough into 8 equal parts. Roll out each section of the dough to about 1/4" thickness on a floured board. Bake them on a lightly greased griddle or skillet at the same temperature that you would cook pancakes, for about 5 minutes each side. They should feel dry but pliable, and have some light brown blisters. Keep them warm in a damp towel in the oven as they are cooked. Serve hot.

MOM'S POTATO SCONES

2 c. flour
1/2 tsp. salt
1 tbsp. baking powder
3 tbsp. shortening
3/4 c. mashed potato
2/3 c. milk
2 eggs

Sift dry ingredients. Work in shortening and potatoes. Add milk and eggs. Roll out. Cut with biscuit cutter. Bake on hot griddle.
