Hot Sandwhiches, Easy Recipes?

I am lookng for some Easy and somewhat healthy hot sandwhich recipes. By easy I mean sandwhich meats and other things I do not have to cook to put in them. Hot sandwhiches would give me a more home cooked feel, but some easy cold ones work too.

Hot Antipasto Subs
* 2 cups marinated Italian deli salad
* 1/4 cup sliced black olives
* 1/2 cup sliced pepperoni
* 1/4 cup creamy Italian salad dressing
* 2 Hoagie buns, split in half
* 1-1/2 cups shredded mozzarella cheese

PREPARATION:
Combine deli salad, olives, and pepperoni in medium bowl. If necessary, stir in creamy Italian salad dressing to moisten.

Set oven control to broil. Place buns, cut side up, on ungreased cookie sheet and broil 6" from heat about 4-5 minutes until golden brown. Spoon deli salad mixture onto buns and sprinkle each with 1/4 cup mozzarella cheese. Broil 3-4 minutes until cheese is melted and sandwich is hot. Serves 4

I use a ciabatta roll. Spread pesto on either side, fill it with roasted peppers (you can buy it in a jar), sprinkle on mozzarella cheese and basil leaves. Then heat it through.

Or grill/fry some bacon. Toast a bagel, spread with cream cheese and add the bacon. Oh yum.

sunny side up egg, ham and cheese.

here are a couple of ideas for you
Bourbon Street Po' Boy
Serving Size : 4

6 tablespoons Butter or margarine
6 tablespoons Flour
1 Onion,large -- sliced
1 Green bell pepper, small -- sliced
2 cups Beef broth
1 teaspoon Worcestershire sauce
3/4 teaspoon Tabasco sauce
1/2 teaspoon Thyme -- crumbled
1 pound Beef -- thinly sliced cooked
4 Hero rolls




1. Melt butter in medium saucepan; stir in flour.
2. Cook over medium heat, stirring constantly, until flour browns, about 4 minutes.
3. Add onion and bell pepper.
4. Cook over medium heat, stirring constantly, about 5 minutes; gradually stir in broth.
5. Add Worcestershire sauce, Tabasco and thyme; stir constantly until mixture boils and thickens.
6. Cut a thin slice from top of each roll; scoop out soft insides.
7. Arrange meat on each roll; spoon gravy over meat and replace tops on rolls.



Western Sandwiches
6 eggs
3 tablespoons finely chopped onion
1 green bell pepper, chopped
1 cup chopped cooked ham
1/4 cup milk
1/4 teaspoon pepper

Beat eggs slightly; add chopped onion, green pepper, ham, milk, and pepper. Pour onto 2 large hot greased skillets. When set, cut into 8 sections and turn. Serve on toasted bread; pass the ketchup.
Serves 8.


Zippy Roast Beef Sandwich
8 slices rye bread
butter
1/2 cup sour cream
2 teaspoons dry onion soup mix
2 teaspoons prepared, well-drained horseradish
dash pepper
thinly sliced chilled roast beef
lettuce leaves



Spread butter on bread slices. In a small bowl, combine sour cream, soup mix, and horseradish and pepper. Spread about a tablespoon of the sour cream mixture over each of the 8 slices of bread. Top 4 slices of bread with roast beef slices, then a few lettuce leaves. Cover with remaining slices of bread.
Makes 4 sandwiches.

Grilled cheese and ham. Two slices of bread, butter, a slice of cheese and a piece of ham. Add what ever condiments you like. Grill in a pan until brown on each side. Very good and quick. Get some microwaveable Campbells Tomato Soup and you have a filling meal.

Reuben sandwich:
3-5 pieces of pastrami
1 piece provolone or Swiss
1/2 C drained sour kraut
2 pieces rye bread (toasted or not)

On a microwave plate, place the pastrami and drained (squeeze excess juice out) and heat for 45 seconds. When done, place the cheese on it to melt and then put between the two pieces of rye bread.

Turkey sandwiches
3-4 slices of turkey
1/2 C jarred turkey gravy
2 pieces any kind of bread

Heat turkey and gravy in microwave for 45+ seconds, then pour over the two slices of bread.

Tuna Melt
Ready made tuna salad (from deli section of most stores)
slice of American or cheddar cheese
any kind of bread buttered

In a small fry pan, put one slice of bread butter side down. scoop tuna salad on and add the cheese, then place the other slice of bread butter side up. Fry like a grilled cheese sandwich.

Either do grilled cheese by itself or do a grilled ham (or pot roast) and cheese....get the ham or pot roast from the lunch meat section at the store that way you don't have to cook it. They also make premade sandwiches that you just stick in the microwave and cook, look in the freezer isle or by the lunch meats for them....

this is my favourite:

Ingredients:

* 1 large Focaccia loaf
* 1 tbsp extra virgin Olive oil
* A large handful of fresh Spinach, roughly chopped
* A large handful of fresh Rocket, roughly chopped
* 4 tbsp Tapenade
* 150 g mild Goat Cheese
* 1 Red Pepper, roasted and cut into strips

Method:

* Mix green leaves in a bowl and drizzle with olive oil.
* Cut the bread horizontally and scoop out some of the dough in the middle.
* Spread both cut sides of the bread with tapenade and goat cheese, then add roasted pepper and mixed leaves.
* Cover with the other side of bread, wrap tightly in clingfilm and leave for at least 10 minutes before serving.
* Serve thick slices of the loaf with green salad on the side.
