This is an easy salmon recipe.
Ingredients:

* 8 Salmon fillets
* 125 ml Peanut oil
* 4 tbsp Soy sauce
* 4 tbsp Balsamic vinegar
* 4 Spring onions, chopped
* 3 tsp Brown Sugar
* 2 cloves Garlic, minced
* 1 1/2 tsp ground Ginger
* 2 tsp Red Pepper flakes, crushed
* 1 tsp Sesame oil
* 1/2 tsp Salt

Method:

* Place salmon fillets in a medium, nonporous glass dish.
* In a separate medium bowl, combine the peanut oil, soy sauce, vinegar, spring onions, brown sugar, garlic, ginger, red pepper flakes, sesame oil and salt. Whisk this together well and pour over the fish. Cover and marinate the fish in the refrigerator for 4 to 6 hours.
* Prepare an outdoor grill with coals about 5 inches from the grate and lightly oil the grate.
* Grill the fillets 5" from coals for 10 minutes per inch of thickness, measured at the thickest part, or until fish just flakes with a fork. Turn over halfway through cooking.
* Serve with boiled rice.

CANNED SALMON (ANY FISH)

Salted water (1 c. to 1 gallon)
Each jar takes 1 tbsp. vinegar, 1/2 tsp. salt, tomato juice

Cut fish in 2" to 3" pieces. Place in salted water for 2 to 3 hours. Drain.
Pack loosely in pint jars. Add vinegar to salt, then fill jar with tomato juice to within 1" of the top. Use knife to work juice around fish to remove air pockets. Seal jars and process 90 minutes at 10 pounds pressure.
