Cajun Frog Legs
16 good sized frog legs
1 cup shortening
1/2 cup flour
3 cups milk
1 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic juice
1/2 teaspoon ground cayenne pepper
1/4 teaspoon black pepper
1 dash white pepper
1 dash oregano
1 dash rosemary
salt to taste


Directions:

Skin, clean and rinse frog legs well. Cover with whole milk and garlic juice in a plastic mixing bowl, refrigerate overnight. Pat dry, season with paprika, onion powder, cayenne, black pepper and desired amount of salt. Add white pepper, oregano and rosemary to the flour. Heat shortening in a skillet. Lightly flour the frog legs and fry until golden brown.

Same batter as fried chicken

Make sure the legs are from a frog and not just a skinny human being. Then, look the frog in the eyes and ask yourself, "Can I cook this dude with a face as cute as that?" Then, if you are human, give the frog a nice home and raise him or her. If the frog is already dead, find out who killed him or her and fry his or her damn legs.

Garlic Frog Legs:

50 min 15 min prep
4 servings

16 large frog's legs or 32 small frog's legs
all-purpose flour
2 tablespoons butter
2 teaspoons corn oil
4 teaspoons garlic butter
salt
pepper
lemons, juice of
flat leaf parsley
lemon slices (to garnish dish)

1. Clean legs under cold water and dry them.
2. With a small knife, make an incision between and bone of lower part of one leg and insert through the other (criss-cross).
3. Preheat oven to 400°F.
4. Salt and pepper each leg and cover them with flour.
5. In a saucepan add the butter and brown them 4 minutes each side.
6. In a small pot add the garlic butter, parsley, and lemon juice; simmer a few minutes.
7. Put the legs in an oven proof-baking dish; pour over the garlic sauce and bake for about 30 to 35 minutes.
8. Serve on preheated plates. Bon appetit.

You acn marinate it and grill it, use this recipe:
* 2 Red peppers, roasted and quartered
* 200 g Apricots, halved and stoned/ dried apricots
* 3 cloves Garlic, crushed
* 225 ml Chicken/ vegetable stock
* 1 Lemon, zest
* 2 tsp Soy sauce
Method:
Blend the sauce in a blender or food processor, add the soy sauce and blend until an smooth sauce is formed.

Dip them in seasoned flour with Salt and Pepper, then in a whipped egg, then into corn meal and fry, Um mm.

FROG LEGS IN WHITE WINE

Serves 4

Ingredients
? 1 cup white wine
? 1 onion, sliced
? 1 fresh flat-leaf parsley sprig, chopped
? 2 1/2 pounds frog legs
? 2 tablespoons butter
? 1 teaspoon all-purpose flour
? 1 egg yolk
? juice of 1 lemon, strained
? salt and pepper


Directions
Put the wine, onion and parsley in a pan, season with salt and pepper and bring to a boil.

Add the frogs' legs and cook over medium heat for 10 minutes.

Remove the frogs' legs and boil the cooking liquid until it has reduced by two-thirds.

Melt the butter in a small pan, stir in the flour and then stir the mixture into the reduced cooking liquid.

Pass through a food mill into another pan, return to the heat and bring to a boil.

Add the frogs' legs and cook for a further 5 minutes.

Meanwhile, beat together the egg yolk and lemon juice in a bowl.

Move the pan to the edge of the stove and stir in the egg yolk mixture.

Well since we only eat them while camping it's not as fancy as the others but you cut the legs off skin them cut the tenden (or they will jump out of the pan, it's right behind the knee) a little salt and pepper, mesquite seasoning and fry them in bacon grease. Hope you enjoy!

season them with salt and peper use alot of garlic (freah) and toss them in a pan with olive oil (optional) toss in some red peper flakes crushed
