What is an awesome chicken breast recipe?

I have to make something very tasty and flavourful using chicken breasts-in the oven. I have some picky eaters coming over and I'd like it to not be too complicated but to be packed with taste. Any tested recipes?

does it have to be in the oven, becuase this is a really good recipe. it's an entire meal, in fact! i always wow my guests with it and it's super simple.

Parmesan Crusted Chicken Breasts with Tomato and Basil and Potatoes with Peppers and Onions

1 1/2 to 2 pounds fingerling potatoes or red skin baby potatoes
1 small red bell pepper, seeded and cut into thin strips
1 Italian mild green pepper, cubanelle, seeded and thinly sliced
1 medium yellow skinned onion, thinly sliced
4 large cloves garlic, cracked away from skin
1 teaspoon crushed red pepper flakes
1/4 cup tablespoons extra-virgin olive oil, divided
Coarse salt and pepper
2 cups shredded Parmesan, available in tubs near deli -- make sure to get shredded cheese, not grated
4 (6 to 8-ounce) boneless, skinless chicken breasts
4 plum Roma tomatoes or small, vine ripe tomatoes, seeded and chopped
15 to 20 leaves fresh basil, pile leaves, roll then thinly slice -- chiffonade

Preheat oven to 500 degrees F.
Cut fingerling potatoes into halves or quarters, depending on thickness of fingerlings -- thin, small fingerlings may also be left hole, larger potatoes should be quartered to speed cooking process. If you are using small red potatoes, halve or quarter them in the same way.

Cover a large cookie sheet with foil. Place potatoes on cookie sheet. Combine with peppers and onions, garlic and crushed red pepper flakes. Coat the potatoes, peppers and onions with extra-virgin olive oil just enough to coat vegetables in a thin layer, 2 to 3 tablespoons. Season liberally with salt and pepper. Place potatoes in the oven and roast 20 to 22 minutes, until potatoes are just tender and peppers and onions are crisp at edges. Toss mixture with tongs, turning the potatoes after 15 minutes. When the potatoes are cooked, transfer them to a serving dish and peel the foil off the cookie sheet and discard for super-quick clean up!

While potatoes cook, prepare chicken. Roll out a 2-foot piece of waxed paper or foil near the stove top. Heat a large nonstick skillet over medium high heat -- your pan must be very hot when the chicken is added. Pile the shredded cheese on the work surface created with the waxed paper or foil. Season your chicken breasts with black pepper but no salt; the cheese will add enough salt to the taste of the dish. Press the breasts firmly into the cheese. Coat both sides of breasts with as much cheese as possible. Add 1 tablespoon extra-virgin olive oil to the skillet, 1 turn of the pan. Set breasts into the skillet and cook 7 minutes on each side, until cheese forms an even, golden casing around the tender chicken breasts.

While chicken cooks, combine chopped tomatoes with basil in a small bowl. Season with salt and pepper, to your taste.

Drain off any excess oil from chicken as you remove it from the skillet. Top chicken with big spoonfuls of raw sauce and serve with potatoes, peppers and onions.

Well not sure how picky your eaters are but I have a very simple and good recipe. It is pepper jack chicken. Flatten out your chicken breast, role it in taco seasoning, then put a big piece of pepper jack cheese in the middle, roll up and secure with a tooth pick and put in a 350 degree oven for about an hr or until the juice run clear. Good luck!

I would marinade the chicken in italian salad dressing....dip in milk...cover with bread crumbs, and bake for 35 min. Place a slice of cheese on top 5 min before cooked.....serve with pasta or on a nice salad.

i make a great recepie using chiken breast.
1 box stuffing
1 can cream mushroom soup
chicken breast
1 pkg onion soup mix

use roaster, spray with cooking spray make stuffing in it as directions say. place stuffing in loaf shape place chicken breast on top of stuffing pour mushroom soup over breast sprinkle onion soup mix over breast. cover with aluminum foil bake 30-40 minuts til chicken is done. YUMMY!

Tonight I rubbed chicken breasts down with olive oil sprinkled Italian seasonings all over it. Topped it with fresh sprigs of rosemary and added a bunch of garlic cloves to it. Placed it in foil and slow cooked it for an hour and a half at 300°. It was moist and delicious....simple too.

make a sauce out of balsamic vinegar, rosemary, and brown sugar. just cover the bottom of your pan with balsamic, add a tablespoon or two of brown sugar, make sure and give it a taste, and then some rosemary to it. heat it up till it starts to simmer, making sure the sugars are dissolved. pour over the chicken and serve immediately.

I like to sear my chicken, wrap them in grape leaves, and then pour this sauce over them with a sprig of fresh rosemary wrapped inside the leaves. then finish them off in the oven.

Really easy one here.............. slit the chicken breast add a spoonfull of green pesto and a large chunk of mozarella, wrap in parma ham or bacon and bake for around 30 mins, serve with minted new potatoes and salad...............delicious!...

marinate your chicken breasts in seven seas italian dressing overnight. bake them in the oven on 375 degrees , covered for 35 minutes and then uncovered for 15. add some mushrooms and the rest of the seasons mix to the pan during the last 15 mins. serve with white rice and cesar salad.

My mom used to make this awesome dish that wasn't fancy or anything but we all liked it.
Cube the chicken in fairly medium sizes.
Add olive oil...
lemon juice...
sliced garlic...
turmeric for color...
salt and pepper...
white mushrooms (you could slice them but I like them whole)...
just put it in the oven. Oh and you have to be generous with the olive oil and lemon juice cz you don't want it to come out dry.
You could eat it with normal rice... that is what we do. And since you were generous with the olive oil and lemon juice... you could pour it over the rice so the rice would get some flavor.

Chicken Potato Bake

1/4 cup dried bread crumbs
1/4 cup grated Parmesan cheese
1 teaspoon dried Italian seasoning
Salt and pepper to taste
1 egg, beaten
1 (24-30 ounce) package frozen hash brown potatoes, thawed
10 ounce can cream of chicken soup
1/2 cup milk
1 cup sour cream
1 cup grated Monterey Jack cheese
1 red bell pepper, chopped
6 boneless, skinless chicken breasts
PREPARATION:
Preheat oven to 375 degrees F. Combine bread crumbs, Parmesan cheese, Italian seasoning, and salt and pepper on plate. Place egg in small shallow bowl; beat well.
In 13x9" glass baking dish, combine potatoes, soup, milk, sour cream, Monterey Jack cheese, and red bell pepper; mix well.

One at a time, dip the smooth side of a chicken breast in egg, then in bread crumb mixture to coat. Place, coated side up, on the potato mixture. Repeat with remaining chicken breasts.
Bake for 35-45 minutes or until chicken is thoroughly cooked

ITALIAN CHICKEN

Preheat to 350. Put chicken in baking dish. Drench w/ Italian Dressing. Cook about 20-25 minutes or until done. I know there's hardly any ingredients, but trust me! It's AWESOME! And super easy!
