this looks like alot, but it's not. it's all just chopping vegetables. you'll be amazed at how good this is, considering there's no sauce. highly recommend trying it.

Pasta Primavera Recipe

3 carrots, peeled and cut into thin strips
2 medium zucchini or 1 large zucchini, cut into thin strips
2 yellow squash, cut into thin strips
1 onion, thinly sliced
1 yellow bell pepper, cut into thin strips
1 red bell pepper, cut into thin strips
1/4 cup olive oil
Kosher salt and freshly ground black pepper
1 tablespoon dried Italian herbs or herbes de Provence
1 pound farfalle (bowtie pasta)
15 cherry tomatoes, halved
1/2 cup grated Parmesan

Preheat the oven to 450 degrees F.

On a large heavy baking sheet, toss all of the vegetables with the oil, salt, pepper, and dried herbs to coat. Transfer half of the vegetable mixture to another heavy large baking sheet and arrange evenly over the baking sheets. Bake until the carrots are tender and the vegetables begin to brown, stirring after the first 10 minutes, about 20 minutes total.

Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.

Toss the pasta with the vegetable mixtures in a large bowl to combine. Toss with the cherry tomatoes and enough reserved cooking liquid to moisten. Season the pasta with salt and pepper, to taste. Sprinkle with the Parmesan and serve immediately.

Simple Pasta
------------------------------...

Ingredients spaghetti or perciatelli
olive oil
clove garlic
anchovies
grated parmesan or romano cheese
crushed red pepper, salt and pepper
tomato sauce or puréed tomatoes
Recipe Sauté garlic in olive oil, add 1 or 2 mashed anchovies. Coat freshly boiled al denté pasta with this mixture. Blend in a little tomato sauce and then lots of cheese -- the proportions should be such that the pasta is well-coated but essentially dry. Season to taste.

This is my alfredo-cheat recipe. Boil 8 oz. pasta. Saute a package of sliced mushrooms in a bit of butter, with garlic. Then add a jar of Classico roasted garlic alfredo sauce. When that's warm, add about 1/4 cup half and half and a handful of shredded Parm and some pepper. Drain the pasta and toss with the sauce. You can even add chopped parsley if you have it.

It's like dressing up convenience food!

I make a pasta recipe that is so good I amazed myself.
two table spoons of Extra Virgin Olive Oil
one pound chop meat
one Large onion
as many cloves of garlic as you want
2 cans of Progresso Tomato Soup
one small jar of Ragu source

in a large pot put the evoo, chop meat, onion and garlic. When the meat is brown put in the soup and a small jar of Ragu and then fill the jar with water. Add to pot. Let cook on a low heat for at least an hour.

The best thing about this recipe is you can use any kind of pasta you want.

Penne with Roasted Red Pepper Cream Sauce

Roasted Red Peppers - (don't remember the weight, but it's the larger of the two jars you can buy in the store)
2 cloves minced garlic
1/2 pint heavy cream
1/4 cup chopped vidalia onion
1/4 cup grated parmesan cheese
olive oil
salt
pepper
fresh basil (optional)

Saute the peppers, garlic, and onion in olive oil until the onions start to caramelize. Transfer to a blender, add the heavy cream and parmesan cheese, and blend until smooth. Add salt & pepper to taste and toss with cooked penne. Finish with parmesan cheese and chopped basil.

You can even add some sauteed italian sausage if you want.
