Pasta Recipe?!

Pasta Recipe?

I'm wanting to try to cook a pasta dish tonight, I'm not the best cook, but what I'm going to do is boil some pasta noodles, and then when they're cooked, I'm going to add some tomato, peppers, seasoning, etc. What I'm needing help with is the pasta sauce. I really like a vinegarette type sauce, not too thick or creamy, just something really simple. Does anyone have an idea for a good vinegarette type pasta sauce that's really easy to whip up? Thanks!


Answers:
Olive oil, lemon, fresh garlic, and parmesan. Salt and pepper to taste...

First of all...cook the pasta last and (separately) add the sauce just before serving. This will keep the pasta from getting too mushy.
For the sauce.
Two Large cans (if 2 or less people Use only one can) of whole peeled or diced tomatoes
Half a yellow onion (finely chopped)
one whole Green pepper(diced)
3 Table spoon minced garlic or 2 teaspoons garlic salt
Half a stick of butter
Oregano
2 teaspoons olive oil

In the pan at medium heat add Oil then add peppers onions and garlic.
Saute until the onions are tender. Add tomatoes, if using whole peeled chop them up before adding.
Add butter and oregano.
Salt and pepper to taste.
let simmer on low heat while you cook your pasta.

Not a vinaigrette but try this, it's not heavy or creamy:

Pomodoro Sauce

2 garlic cloves, minced
2 tablespoons onion, diced
2 tablespoons olive oil
2 tomatoes, chopped
3 tablespoons fresh herbs (oregano, basil, parsley), chopped
Salt and pepper, to taste
Pinch of sugar

In a saucepan over medium heat, sauté garlic and onion in oil for 2 minutes. Add tomatoes and herbs; continue to cook for 5 minutes until the tomatoes soften.
Season with salt, pepper and sugar.
Serve with pasta of your choice.
Yields 4 servings.

Here's another:

Red Pepper Pasta Sauce
Yield: 4 Servings

3 c Chopped red bell pepper
1 Clove garlic; minced
1 c Chicken broth
1 tb Tomato paste
1/4 ts Salt
dash Hot Pepper Sauce
1 tb To 2 chopped fresh basil

Bring all to a boil; reduce heat and simmer until
slightly thickened, about 20 minutes. Process in
blender or processor until smooth. Serve over hot
cooked pasta. Garnish with additional basil, if
desired.

Microwave directions: Microwave covered, the
pepper, onion and garlic 4-4 1/2 minutes until
vegetables are tender. Add 1/2 cup chicken broth,
tomato paste, salt and hot pepper sauce. Cook,
uncovered, on high 2-3 minutes. Continue as above.

You could try a Pesto:

INGREDIENTS
3 cups fresh basil leaves
1 1/2 cups chopped walnuts
4 cloves garlic, peeled
1/4 cup grated Parmesan cheese
1 cup olive oil
salt and pepper to taste

DIRECTIONS
In a food processor, blend together basil leaves, nuts, garlic, and cheese. Pour in oil slowly while still mixing. Stir in salt and pepper.

This one is a tomato sauce, but it has vinegar and olives and capers in it too:

Greek Pasta Sauce:

INGREDIENTS
1 small yellow onion, diced
1 tablespoon olive oil
5 cloves garlic, minced
1 (16 ounce) can organic Italian diced tomatoes
1 (6.5 ounce) can tomato sauce
1 tablespoon capers, chopped
15 kalamata olives, pitted and sliced
2 tablespoons balsamic vinegar
salt and pepper to taste
crushed red pepper to taste (optional)
crumbled Feta or grated Parmesan Cheese

DIRECTIONS
In a skillet, cook onion in olive oil over medium high heat until tender and translucent. Stir in garlic, and cook for 1 minute. Add tomatoes, tomato sauce, capers, olives, vinegar, salt, pepper, and crushed red pepper (if using).
Reduce heat, cover, and simmer for a minimum of 30 minutes, or up to 2 hours, time permitting. Serve over pasta, fish, or chicken, and top with crumbled feta or grated Parmesan cheese. Enjoy!

Anyway, whatever you choose I am sure it will be good...Good luck and happy eating!

Here's a very very easy recipe for a pasta dressing.

In a blender/mixer/foodprocessor/bo... take
1. half cup olive oil
2. salt (only sprinkle)
3. 1 diced tomato
4. about a quarter of avocado (don't worry if you don't have avogado with you)
5.2 table spoonfull vinegar or apple cider
6. If you like spicy then add a sprinkle of red chili powder
7. 1 teaspoon mastard
8. half a teaspoon sugar (I know it sounds weird but trsut me)
9. if you have then any one of soy sauce/ BBQ sauce/ ketchup/relish 1 teaspoon

Then blend and enjoy.

vinaigrette is usually vinegar (Balsamic will do) and oil, salt pepper, maybe some red pepper flakes, you can add some oregano. But I never had this on hot pasta. Just on cold pasta salad. Are you sure you mean vinaigrette?

Here's the dish that we make all the time. It's so easy and now a favorite - can always add more stuff and change it up.

Saute onion cut up into 1" size pieces and any types of peppers you want (red/orange/yellow) in some olive oil and a few tablespoons of butter with garlic and salt and pepper. I sometimes add a few dashes of hot sauce as well. Then add shrimp (or i guess any type of meat if you wanted it) and cooke until that's done. Add it to the pasta with some parm cheese. Yummy!
