Any yummy ideas or recipes?

I am having 3 of my girlfriends over for lunch on Sunday. I would love some recipes that I can make ahead of time. I don't want to be stuck in the kitchen and miss any of the gossip!!! :)

have had many compliments on this pasta salad.it's great for summer luncheons and is an easy-make-ahead recipe.
Penna pasta
package of Italian dressing mix
miracle whip dressing
diced celery, green onions, green pepper
cherry tomatoes
medium sized cooked shrimp
green pimento olives
toss and pop in fridge the day before( it's better that way ) then serve with a good crusty bread with a garlic butter spread.

u can NEVER go wrong with fudge, cake, or brownies

Have something simple like soup,and sandwiches!You can make that in a hurry.

It depends on the types of foods your friends like. I would recomend this enchirito recipie:

INGREDIENTS:
1 pound ground round
2 tablespoons finely minced onion
1/4 teaspoon salt
1 teaspoon chili powder
1 can (16 ounces) refried beans
minced onion, about
1 can (10 ounces) enchilada sauce
2 1/2 cups shredded cheddar cheese
1 can sliced black olives (4 oz.)
1 package flour tortillas, 10-inch size
PREPARATION:
Brown the ground beef in a skillet with chopped onion, breaking up beef into small pieces, until beef is no longer pink. Add the salt and chili powder. Mash the refried beans until smooth. Heat beans in the microwave or a small saucepan.
Warm tortillas all at once in a covered container or wrapped in moist towel in microwave. This will take 30 to 40 seconds on HIGH setting. Or, heat tortillas in a lightly oiled sillet for about 1 or 2 minutes per side. Spoon 3 tablespoons of beef mixture into the center of each tortilla. Sprinkle about 1/2 teaspoon of minced onion over each. Top with 1/3 cup of the warm refried beans. Fold sides of each tortilla over the beans and meet edges. Flip the tortilla over onto an oven-safe or microwave-safe plate.
Spoon 3 tablespoons enchilada sauce over top of the tortilla. Sprinkle on 1/4 cup shredded cheese, heat in microwave or under broiler until cheese is melted, then top with 3 olive slices.

Here is something you can make ahead and serve with sandwiches. Its called a "Happy Time Cheesesball"
Get one glass jar of dried beef [chop this fine]
1 bunch green onions [ according to taste dice small]
2- 8 ounce pkg cream cheese.[bring up to room temp]
chop dried beef, green onions - put in cream cheese and mix well. Wrap and leave over night or until your ready to use.
Serve with crackers so you will be able to join in with the gossip. Then serve with sandwiches of your choice and you will still be able to be in on the gossip. Bless you and have a good day!!

Not-Baked Alaska



1. 1 (12 ounce) loaf pound cake
2. 2 cups chocolate ice cream, slightly softened
3. 1 (8 ounce) tub COOL WHIP Whipped Topping, thawed
4. 1/4 cup BAKER'S ANGEL FLAKE Coconut, toasted



1. Cut cake horizontally into 3 even layers. Place bottom cake layer on serving plate; spread with 1 cup of the ice cream. Repeat layers of cake and ice cream. Cover with top cake layer.
2. Frost sides and top of cake with whipped topping; sprinkle with coconut.
3. Serve immediately. Or, store in freezer until ready to serve.

Yield: 10 servings
