Can you eat dark spots on potatoes?
When cutting potatoes, I always cut the black/grayish/discolored area out? The texture of the potato is the same except for discoloration. Am I wasting my time or should I continue doing this?

I would cut them out because they can be tough spots. The black spots are also where rotting begins or where sprouts start to grow.

Yes but they will have a bitter taste to that area. It is best to cut them out - just like bruising on Bananas.

Potato (Solanum tuberosum) -- Black Spot (Internal Black Spot)
Cause: A physiological disorder associated with low moisture content of the tuber at harvest, bruising, low storage temperatures, and potash deficiency. Bruising increases rapidly when the pulp of potatoes being harvested drops below 47 to 50°F (8.33 to 10°C). Desiccation (pressure flatting) increases black spot when potatoes are handled.
Symptoms: Internal black spots usually are at the tuber's stem end. White, smooth-skinned cultivars are more susceptible.

Keep cutting out the dark spots. If you eat enough of the dark spots they can become toxic.
i'm from idaho- we know our potatoes- definately cut the dark spots out- and if its in the core of the potato throw it out- thats a potatoe disease called black heart or hollow heart. however- its important to wash the potato reall good- but don't peal the skin off it- there are a lot of vitamins and minerals in the skin and in the potato right next to the skin...
