SKEWERED ROSEMARY SHRIMP WITH MINT PESTO
Rosemary sprigs double as flavoring agents and skewers in this beautiful hors d'oeuvre. Only half of the pesto is used for this recipe; toss the remainder with pasta or spread thinly on crostini or grilled chicken breasts. What to drink: Pinot Grigio.
Mint pesto
1/2 cup pine nuts, toasted
3 garlic cloves, peeled
2 tablespoons (packed) feta cheese
2 tablespoons (packed) Parmesan cheese
1 tablespoon coarsely chopped jalape?o chile
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 cups (packed) fresh mint leaves
2 tablespoons fresh lemon juice
1/3 cup extra-virgin olive oil
Shrimp
24 large uncooked shrimp (about 2 pounds), peeled, deveined, tails left intact
2 tablespoons olive oil
2 garlic cloves, minced
1 tablespoon chopped fresh parsley
3 tablespoons fresh lemon juice
24 4-inch-long woody rosemary sprigs
For mint pesto:
Combine first 7 ingredients in processor. Using on/off turns, process until mixture is smooth. Add mint leaves and lemon juice; process until smooth, stopping occasionally to scrape down sides of bowl. Gradually add oil and process until mint pesto is smooth and creamy. (Can be made 1 day ahead; cover and refrigerate.)
For shrimp:
Preheat broiler. Sprinkle shrimp with salt and pepper. Whisk oil, garlic, and parsley in medium bowl to blend. Add shrimp; toss to coat. Let stand at room temperature 15 minutes. Arrange shrimp in single layer on broiler pan. Broil until opaque in center, about 2 minutes per side. Transfer to large bowl; sprinkle with lemon juice and toss with 1/2 cup mint pesto. Starting at base end of rosemary, skewer 1 shrimp on each sprig. Arrange on platter and serve.
Makes 24.
CAESAR DIP WITH CRUDITES
Over the Fourth of July weekend in 1924, a group of unexpected guests arrived at Caesar’s Palace restaurant in Tijuana, Mexico. Running low on food, the owner, Caesar Cardini, threw together a salad with ingredients he had on hand. He made a thick dressing with a coddled egg, garlic-flavored oil, lemon juice, grated cheese and Worcestershire, which added a taste of anchovy. This dip has all the flavors of that first Caesar salad, and romaine lettuce and fresh veggies are nice “dippers.”
1 cup mayonnaise
1/2 cup sour cream
1/2 cup freshly grated Parmesan cheese
1 tablespoon fresh lemon juice
1 garlic clove, pressed
1 anchovy fillet, mashed
Small romaine leaves
Assorted fresh vegetables
Mix first 6 ingredients in small bowl. Season dip with salt and pepper.
Serve with lettuce and vegetables.
Serves 8 to 10 as appetizers.
Talk about deviled eggs: The decadent filling includes smoked salmon and salmon caviar. What to drink: A chilled dry rosé is refreshing; it also stands up to the sweet-sour components of this menu.
3 tablespoons chopped fresh chives
2 tablespoons olive oil
1 1/2 tablespoons fresh lemon juice
12 ounces thinly sliced cold-smoked salmon, finely chopped
1/4 cup salmon caviar
12 hard-boiled eggs, shelled, halved, whites and yolks separated
Additional chopped chives
Lemon wedges
Assorted fresh herb sprigs
Line rimmed baking sheet with paper towels. Blend 3 tablespoons chives, oil, and lemon juice in medium bowl. Mix in smoked salmon. Fold in caviar. Chop 4 egg yolks (reserve remainder for another use) and stir into salmon mixture. Season to taste with ground black pepper. Pile 1 generous tablespoon salmon mixture in cavity of each egg-white half. Arrange eggs on prepared sheet. Cover with plastic; refrigerate up to 8 hours.
Place eggs on platter. Sprinkle with additional chives. Garnish with lemon wedges and herb sprigs.
Makes 8 servings.
You want some cold and some room temp or warm.
Baby Endive with a cream cheese and herb mixture (any herbs that you like)
Fill split cherry tomatoes with basil, mozzarella and EVOO.
Split and bake small red potatoes with fresh rosemary and sea salt. Serve with toothpicks. Can be anywhere from hot to room temp to cold. They will disappear.
Assorted Olives and nuts. Good and good for your guests.
Chicken or shrimp skewers (can prepare B4 and put in oven to warm). Do both and buy a cool jarred dipping sauce.
The best ending is a large fruit platter with a vanilla fruit dip.
All will pair with Sparkling and a nice Pinot Grigio or SB.
Wow, wish I was going!
Dippy things, like cheese dip with crackers, chips, etc. Veggie or fruit dips with assorted veggies and fruits. I like seasoned pretzels or those little rice cake snacks, especially the sweet ones.
My ultimate favorite... and one you just need a little creativity for... fondue. You can use tiny marshmallows, bits of sponge/angel food cake, pretzels, fruit, whatever.
Ants on a Log
Take celery ribs, cut into desired length, fill the groove with peanut butter and put raisins on top to stick to the peanut butter.
Take a slice of thin lunchmeat, spread some cream cheese on it and wrap it around the white part of a green onion. Make a lot so everyone can have some.
Take a tortilla and spread cream cheese on it, put a couple slices of ham and turkey, sprinkle some oregano on it, roll it up and cut it in slices. Very good and easy. One roll up will make about 10 slices. That's what I always do.
Or, fruit kabobs. Buy the kabobs at the store (long toothpick looking things) put bananas, pineapple, strawberries and grapes on it.
I love smokies wrapped in bacon and cooked in brown sugar.......yummy!!! Also veggies trays or cheese and meat trays would be good.
dips are good..
olive tapenade, hummus...
also nachos and quesidillas are easy and tasty foods.
Here is one that we had a party i went to it was great!!
