This is very easy...first off omelets are your play land...you can put whatever you like in them...you don't even need to use vegetables. You can make all meat omelets, cheese, egg whites only, or thick omelets that you place in the oven. They are called frittata. My favorite omlet is egg whites with portobella mushroom and spinach. Just be creative and create something you love.
SPANISH OMELET
3 large potatoes
3 rashes of bacon

CHEDDAR MUSHROOM OMELET

In 10" omelet pan, saute mushrooms in butter. Remove mushrooms from pan, set aside. Combine eggs and water; beat until blended. Pour egg mixture into hot pan. As edges begin to set, lift cooked mixture with spatula allowing uncooked mixture flow under omelet. When omelet is set, yet still moist on surface, cover half of omelet with mushrooms and cheese. Fold in half; slide onto warm serving plate.
GERMAN FRIED POTATO OMELET WITH BACON
Serves 4 as a light lunch or brunch dish.
5 tbsp. butter
1 lg. Idaho or russet potato, cooked until tender and cut into cubes
Salt and freshly ground black pepper, to taste
2 1/4-inch-thick slices Canadian bacon, coarsely chopped
6 eggs, lightly beaten
Heat 3 tablespoons of the butter in an 8-inch skillet and cook the onion over low heat for 5 minutes. Add the potatoes, salt, and pepper and turn up the heat. Continue cooking for 5 minutes more or until the potatoes look crusty at the edges.
Add the bacon to the pan and cook for 1 minute more. Add the remaining 2 tablespoons of butter to the pan with the eggs. Stir thoroughly, then follow the directions above. Cook and bake as directed.
Slide the finished omelet out of the pan onto a large round plate. Cut into quarters and serve at once.
our omelets always have diced ham, shredded cheddar cheese and sometimes crumbled bacon. if we really want some artery clogging omelets, we also add crumbled sausage.
