How can I season a tuna fillet and actually have it taste like something?

And I mean a nice thick fresh tuna fillet. I usually have it partially rare but it never really tastes like anything. So how can I get some flavour into my fish??

Since more details are needed--I just mean I want a dish that uses fresh tuna and that adds flavour. When I grill it I usually use a soy sauce dipping sauce but ot doesn't really help.

GRILLED TUNA SANTA FE

1/2 c. fresh lime juice
1/2 c. beer
4 tsp. cumin
1/2 tsp. salt
Fresh tuna fillets or steaks for each person
Sliced avocado, salsa (optional)
4 cloves garlic, minced
3 tbsp. oil
4 tsp. Dijon mustard

Combine lime juice, beer, oil, cumin, mustard, salt and garlic in a large shallow dish. Marinate for 2 hours, turning occasionally. Grill on preheated BBQ, approximately 5 minutes each side. Serve with salsa and a slice of avocado, if desired.

GRILLED SALMON SALAD

3 grilled tuna fillets, skinned & cut in bite size pieces
1 head Romaine lettuce, in bite size pieces
1/2 tsp. fresh dill
1 tbsp. horseradish
1 tbsp. lemon juice
1 1/2 tbsp. capers
1 sm. red onion, sliced
3 tbsp. herbed olive oil
2 tbsp. herbed vinegar
Salt & pepper to taste

Be sure to remove all bones form salmon. Place all ingredients in a large salad bowl with the exception of the olive oil and vinegar. Place in refrigerator to cool for 1 hour. Just before serving, add olive oil and vinegar and toss well. Serve with large croutons.

This is such a hard question to answer. I wish you would be a little more specific as to what kind of dish you are interested in preparing. But, it always helps to season your fish with a little bit of fresh ground pepper and salt. Just rub it in on all sides. Let sit for a couple hours. This will give the fish some flavor. What i like to prepare is a tuna salad. I sear the fish on all sides using sesame oil in a pan, then when done salt and pepper fish and let sit for a couple hours. prepare a salad, Slice fish realluy thin and lay on salad. Dress with ponzu sauce onto fish and salad. (Ponzu is a Soy sauce vinagrette). This is normally and extremmely easy and tasty dish to make. I dont wanna type a whole bunch, but Im from hawaii where Tuna(ahi) is a staple food. If you want anymore ideas on how to cook ahi, just email me. I will be more than happy to send you some recipes. There are several ways to do this but please keep it partially rare. First it needs to be really fresh or the flavor quickly departs.

There are numerous combinations of lemon, black pepper, and herb (like oregano) that will do what you wish. Also be sure to salt the fish before grilling preferably with sea salt (I prefer sel d' Geurande from France).

I'm somewhat of a pepper lover and will crack tellicherry black peppercorns coarsely (like for steak au poiver) and push it into the fish. In this case the lemon comes in at service.

Marinating it in lemon, olive oil, and oregano also works.

These ideas also work on swordfish and shark.

Find some blackening seasoning, rub that on the tuna then sear it in a very hot pan for a few seconds on each side. It will keep the tuna rare and juicy and add a nice spicy kick.

You can eat this by itself or serve it on a spinach salad with some strawberries, mandarin oranges, red onion, all tossed in a raspberry or strawberry vinaigrette dressing.

Grill your tuna steak and top it with a tapanade . Its made with green and black olives, caper, basil, olive oil all chopped fine. look it up at foodtv.com.

Try something Oriental for a change. I don't really do measuring, but eyeball the ingredients or seasonings just like what other cooks are doing.

What you need: soy sauce, crushed garlic, ground corn pepper, chopped onions, chopped ginger to get rid of the fishy smell (optional), lemon juice or vinegar, a little bit of sugar to taste

(With the right amount of soy sauce, salt is not needed)

Mix seasonings/ingredients together and marinate the tuna fillet for a few minutes or until the mixture is absorbed by both sides of the thick fresh tuna fillet.

When it's time to grill, you can garnish the fillet with any herbs you like, with red or green peppers and/or with sliced tomatoes. HHHHmmmmm! Taste the big difference. Enjoy!
