How do you make a juicy?!

Question:

How do you make a juicy?

tender steak in the oven or stove top? Thanks!

Answers:
This is a great stove top recipe. If using sirloin steak ask your butcher for sirloin CAP steaks these are way more tender that regular sirloin steaks. If the steaks are 1" thick cook appx. 3 min per side for med. rare.

BALSAMIC GLAZED SIRLOIN STEAK

Can be prepared in 45 minutes or less.

3/4 pound 1/2-inch-thick boneless sirloin steak
2 teaspoons vegetable oil
2 garlic cloves, minced
1/8 teaspoon dried hot red pepper flakes
3 tablespoons medium-dry Sherry
1 tablespoon soy sauce
2 teaspoons balsamic vinegar
1 teaspoon honey
1 tablespoon cold unsalted butter

Pat steak dry and season lightly with salt and pepper.
In a large heavy skillet heat oil over moderately high heat until it begins to smoke and add steak. Cook steak 3 min. on each side for medium-rare meat and transfer with a slotted spatula to a small platter. Keep steak warm.
Pour off almost all fat from skillet and add garlic and red pepper flakes. Cook garlic mixture over moderate heat, stirring, 10 seconds and add Sherry. Boil mixture until almost all liquid is evaporated and remove skillet from heat. Add soy sauce, vinegar, and honey and bring to a simmer, stirring. Add butter and stir over low heat until incorporated. Spoon glaze over steak.

First you have to have the right kind of steak with good marbleing. Sprinkle it with some spices you like.
Brown both sides in a skillet in a little oil.
Then put about 1/4 cup of water in the pan and simmer the steak for about 10 minutes with the lid on. Don't cut into the steak or the juice will run out.
You can simmer it longer or shorter amount of time depending on how well you like it done.

Use a cast iron grill pan like this:

Make sure the pan is hot.

I thought you were going to say like a fart or something.
