Being a former Chef from Canada and love to eat and make PHO, the secret is the stock, you can buy cubes of stock to make it quick, but the pork and chicken stock most Vietnamese places make with the spices and star anise in it make the flavours come out.

Rice noodles, coriander, Thai basil, Onions, Hot chilis, Fish sauce and a touch of soya can be added when serving.

I generally use thinner rice noodles, hydrate the in boiling water and put them in the bowls first, the meat should be sliced thin so when the hot broth hits it, then it cooks right then, then you can play with the previously mentioned garnishes to your liking.

If you cannot make a good stock, find an Asian store, and pick up the PHO cubes, add them to a pot with water, and either a can of chicken broth or powdered stock base, soya sauce, fish sauce and a touch of sugar, heat it to boiling and get the rest of the ingredients ready, then just put it together at the final moment.
