Is it ok to deglaze a pan halfway during cooking pork?!


Question:

Is it ok to deglaze a pan halfway during cooking pork?

my pork was cooked halfway and it had a lot of juice and i deglazed it,took the pork out,wrapped in foil and put it back in the oven for the rest of the cooking time,i am a good cook but i don't deglaze all that often especially with pork..i know there will be some who will say no never but if you've done this before and you're still alive i'd appreciate you letting me know?


Answers:
The only problem I have with this would be the judgment call of weather or not there is enough fond on the bottom of the pan to warrant deglazing. If there is not enough dark sticky stuff on the bottom of the pan, then why deglaze half way through?
If you feel that you got any extra flavor from the deglazing, then sure, go ahead. If it works then you can't argue with extra flavor.

I don't see this as a problem. Since you're still heating the pan to deglaze it, you should cook whatever bits may still be at the bottom of your pan. And these days, pork is usually handled well in farms that even done medium, it's usually safe. Heard that last part from Alton Brown on Food Network.
