Are we talking abut kids? that's easy. first grated your veggies real fine and mix it with everything you cook. For example, in yellow rice, use grated carrots, you can grated zucchini and add it to a muffin mix. You can make you own pasta and grated veggies to make color pasta. you can blend them and add them to make soups. etc....
sprinkle cheese on them.
It's funny to see this question because i am currently writing an essay/recipe collection called "Learning to eat my vegetables".
1. The biggest advice i have is to go to the produce section and stop buying canned or frozen vegetables. Unless they are going in a stew or a very dense casserole where textures are all mixed anyway, anything but fresh is not good enough.
2. buy a VEGAN cookbook. One like "the voluptous vegan".
Vegans, since they live on mostly produce (well, the healthy ones do anyway) know their vegetables inside and out. "The voluptous vegan" is chock full of amazing recipes based on fun flavorful veggies. Serve them alone as a meal, or alongside the meat if you must.
3. Buy in season and learn how to tell when each different fruit and veg is in its peak. Never use veg (with the exception of root vegetables) that are older than a week, even if they look and smell ok. The flavor will be poor and the vitamin content drops anyway, so its not worth it.
4. Try try again. Try different recipes with the same vegetable. Try new vegetables you've never even heard of from your gourmet market. Try old familiars in new ways.
5. google :vegan lunch box . Its a blog about a vegan mom trying to get her husband and kid to love veggies like she does. She succeds time and time again with creative kid friendly recipes, and she even has a cookbook now too.
My dad had a simple rule. Eat some of every thing we put on the table and if you don't take some I'll serve some to you. We all learned to take our own servings. This helped a lot later in life when invited to diner I knew to try some of every thing served and because of this I have tried many different types of dishes from many different cultures. All because of one simple rule.
Season them well, saute with butter and garlic or add cheese.
